ATTA ROTIS WITH LEFTOVER RICE

Hi friends,
Leftover rice can be used to make rotis with Atta or wheat flour . These rotis will be really soft.


Ingredients:
  • Rice - boiled, left over rice - 1 cup
  • Atta or wheat flour  - 1/3 cup
  • Salt - to taste 
  • Water - as required 
  • Oil - for frying 
Method:
  • Grind the leftover rice into a smooth paste in a mixer grinder without adding water
  • Add the Atta or wheat flour and salt to it
  • Mix well
  • Add water as required 
  • Mix the Atta or wheat flour well to form a dough
  • Divide the dough into equal portions 
  • Roll each portion into a ball 
  • Flatten each ball into a circle
  • Heat the tawa  or griddle 
  • Place the roti on the tawa
  • Add 1/2 a teaspoon of oil over it
  • Flip over and cook on the other side as well 
  • Repeat the same with the rest of the dough balls
  • Serve hot with accompaniment of your choice

RAJMA MASALA

Hi friends,
Rajma masala is an all-time favourite accompaniment for rice or roti or chapathi. It is rich in protein and hence healthy and nutritious especially for children and senior people.

Ingredients:

  • Rajma - 1 cup, soaked overnight in 1.5 cups of water
  • Onion - 2, medium sized, roughly chopped 
  • Tomato - 1, medium sized, ground to a smooth paste
  • Ginger - 1inch piece
  • Garlic - 6 cloves 
  • Cinnamon - 1 inch piece
  • Cloves - 3
  • Cardamom - 1
  • Turmeric powder - 1/2 teaspoon 
  • Red chilli powder - 1 teaspoon 
  • Coriander powder - 1 teaspoon 
  • Salt - to taste 
  • Oil - 3 tablespoons 
  • Coriander leaves - a few
Method:
  • Drain off the excess water from the soaked rajma
  • Cook in a pressure cooker with 1/2 a cup of water for 3 whistles 
  • Once the pressure releases, remove from the pressure cooker and keep aside 
  • Grind the ginger, garlic and onions in a mixer grinder into a smooth paste
  • Keep aside
  • Heat Oil in a pan
  • Add the cinnamon, cloves, cardamom 
  • Add the ground onion paste
  • Sauté till it turns brown
  • Add the turmeric powder, red chilli powder, coriander powder and salt 
  • Sauté well 
  • Add the tomato paste 
  • Sauté well 
  • Add the boiled rajma
  • Cook covered with a lid for 4-5 minutes 
  • Garnish with coriander leaves
  • Serve hot with accompaniment of your choice

MINI IDLI SAMBAR


Ingredients:

For the batter:
  • Idli rice (boiled rice) - 4 cups
  • Urad dal - 1 cup
  • Fenugreek seeds - 3 teaspoon
  • Salt - 3 tablespoons
  • Water - 6 cups
For the serving:
  • Sambar - 2 cups
  • Onion - 1, medium sized, finely chopped 
  • Ghee - 3 tablespoons 
Method:
To prepare the batter:
  • Soak the rice, dal and fenugreek seeds in water for 4 hours
  • Drain off the water
  • Grind the urad dal and fenugreek seeds with 3 cups of water in a wet grinder for 15 minutes
  • Remove and keep aside
  • Grind the rice with 3 cups of water in a wet grinder  for 12 minutes
  • Add the ground urad dal to the ground rice in the wet grinder 
  • Add salt
  • Grind all this together in the wet grinder for another 3 minutes
  • Remove and keep aside
  • Allow the batter to ferment for 6 hours
  • Then you can store it in the refrigerator and use it as and when required within a week's time
To make the idlis:
  • Take the mini idli plates
  • Smear it with oil
  • Pour a spoonful of the batter in each slot of the idli plate
  • Repeat the same with the other idli plates
  • Place the idli plates in the steamer
  • Cover the steamer  with its lid
  • Steam cook the idlis in the steamer for 10 minutes

  • Once you switch off the stove, remove the plates from the steamer , allow it to cool slightly
  • Remove the mini-idlis from the idli plates
  • Transfer them to serving bowls
  • Add Two ladles of sambar 
  • Pour a teaspoon of ghee on top of it
  • Garnish with chopped onions
  • Serve hot

CHILLI GARLIC CHUTNEY / POONDU MILAGAI CHUTNEY

Hi friends,
Chilli garlic chutney is a spicy side-dish recipe that can be had with idli, dosa, rava dosa, uthappam, wheat dosa, wheat flour uthappam.


Ingredients:

  • Tomato - 1, chopped into quadrants 
  • Dry Red chillies - (long) - 9
  • Garlic - 6 cloves 
  • Mustard seeds - 1/2 teaspoon 
  • Cumin seeds or jeera - 1/2 teaspoon 
  • Split urad dal - 1/2 teaspoon 
  • Asafoetida or hing - a pinch
  • Curry leaves - a few 
  • Gingelly Oil - 2 tablespoons 
  • Salt - to taste 
Method:
  • Grind the tomato, garlic and dry red chillies in a mixer grinder 
  • Keep aside 
  • Heat the Oil in a pan
  • Add the mustard seeds, cumin seeds and split urad dal 
  • Add the asafoetida and curry leaves 
  • Add the ground tomato paste and salt
  • Mix well
  • Serve

MAIDA MAAVU BONDA

Hi friends,
Maida Maavu Bonda is an evening snack that can be had on a rainy evening. It can be made easily at home. The texture is usually crunchy on the outside and soft inside.

Ingredients:

  • Maida or refined flour - 1 cup 
  • Curd - 1/2 cup
  • Water - 1/4 cup
  • Salt - to taste 
  • Baking soda - a pinch 
  • Black Pepper corns - 8-10, coarsely ground
  • Curry leaves - a few, finely chopped 
  • Oil - for frying 
Method:
  • Take maida in a mixing bowl 
  • Add the salt and baking soda 
  • Mix well
  • Add the curd and mix well
  • Add water little by little 
  • Mix well 
  • Add the black pepper corns and curry leaves 
  • Mix well
  • Heat oil in a kadai or wok
  • Take the batter in a spoon
  • Pour it in hot oil 
  • Flip over and cook on the other side as well 
  • Fry it in batches 
  • Remove
  • Serve hot with accompaniment of your choice 
Tips:
  • You may use two tablespoons to prepare the bond as; one spoon to take the batter and the other to push the batter from the first spoon and drop it in the hot oil

ALOO FINGERS / POTATO FINGERS

Hi friends,
Aloo fingers or Potato fingers is an easy to prepare evening snack. It is similar to cutlets, the shape is cylindrical and hence the name.



Ingredients:
  • Potato - 1, small sized, boiled and mashed
  • Onion - 1, medium sized 
  • Green chillies - 1, finely chopped 
  • Ginger - 1/2 inch, finely chopped 
  • Garlic - 3 cloves, finely chopped 
  • Turmeric powder - 1/2 teaspoon 
  • Red chilli powder - 1 teaspoon 
  • Coriander powder - 1 teaspoon 
  • Garam masala powder - 1/4 teaspoon 
  • Cinnamon - 1 inch piece 
  • Cloves - 3
  • Cardamom - 1
  • Salt - to taste 
  • Oil - for frying 
  • Bread crumbs - 3/4 cup 
  • Maida or refined flour - 2 tablespoons 
  • Water - 1/2 cup + 3 tablespoons 
Method:
  • Heat 1 tablespoon of oil in a pan
  • Add the cinnamon, cloves and cardamom
  • Add the chopped ginger and garlic
  • Sauté well
  • Add the chopped onions and green chillies 
  • Sauté well
  • Add the turmeric powder, red chilli powder and coriander powder 
  • Sauté well
  • Add 1/2 a cup of water 
  • Cook covered with a lid for 4-5 minutes 
  • Then, add the garam masala powder and the mashed potatoes 
  • Mix well till it leaves the sides of the pan
  • Remove and keep aside 
  • Divide the mixture into equal portions 
  • Roll each portion into a ball and flatten it to form a cylindrical shape
  • Mix the maida with water to form a paste
  • Dip the cylindrical potato fingers in the maida paste
  • Then, coat it with bread crumbs and keep aside
  • Repeat the same with the rest of the portions 
  • Heat oil in a pan
  • Shallow fry theses potato fingers in the pan till done
  • Serve hot with accompaniment of your choice

METHI PARATHA

Hi friends,
Methi paratha is a healthy breakfast recipe that can be had by people of all ages. It is of great benefit to people with diabetes since fenugreek has medicinal properties in controlling the blood sugar levels.


Ingredients:
  • Atta or wheat flour  - 1 cup
  • Fenugreek or methi leaves - chopped - 1/2 cup
  • Salt - to taste 
  • Oil - for frying 
  • Water - 1/2 - 3/4 cup
Method:
  • Take the Atta or wheat flour in a bowl
  • Add the chopped fenugreek leaves and salt
  • Mix well
  • Add water little by little and knead the Atta or wheat flour to form a dough
  • Cover and keep aside for 15 minutes 
  • Divide the dough into equal portions 
  • Roll each portion into a ball 
  • Roll out each ball into a flat circle 
  • Heat the tawa  or griddle 
  • Place the paratha on the tawa
  • Allow it to cook 
  • Add half a teaspoon of oil over it all around
  • Flip it over and cook on the other side as well 
  • Remove and serve hot with accompaniment of your choice 
Tips:
  • You may sauté the chopped fenugreek leaves in a teaspoon of oil before adding it to the Atta or wheat flour ,to avoid the raw smell of the leaves

MINI ALOO SAMOSA

Hi friends,
Mini aloo samosa is a healthy evening snack recipe. Since they are bite-sized snacks, they look appealing children too.

Ingredients:

  • Potatoes - 1, medium sized, boiled and mashed
  • Green chillies - 2, small, finely chopped 
  • Jeera or cumin seeds - 1/2 teaspoon 
  • Asafoetida or hing - a pinch
  • Garlic cloves - 3, finely chopped 
  • Coriander powder - 1/2 teaspoon 
  • Red chilli powder - 1/4 teaspoon 
  • Turmeric powder - 1/4 teaspoon 
  • Salt - to taste 
  • Atta or wheat flour  - 1 cup
  • Water - 1/2-3/4 cup
  • Oil - for frying 
Method:
  • Take the Atta or wheat flour  in a mixing bowl
  • Add salt to it
  • Mix well
  • Add water little by little and knead to form a dough 
  • Keep it covered for about 15 minutes 
  • Heat 1 tablespoon of oil in a pan
  • Add the jeera and asafoetida 
  • Add the chopped green chillies and garlic
  • Sauté well 
  • Add the red chilli powder, turmeric powder, coriander powder and salt
  • Sauté well
  • Add the mashed potatoes 
  • Mix well
  • Keep aside 
  • Divide the stuffing into equal portions and keep aside
  • Divide the dough into equal portions 
  • Roll each portion into a ball 
  • Roll out each ball into a flat circle
  • Cut it into 2 halves to form a hemisphere
  • Heat a tawa  or griddle
  • Place each hemisphere on the tawa 
  • Flip over and cook on both sides till small bubbles appear on the surface
  • Remove and keep aside
  • Now place one portion of the stuffing on the hemispheric cooked roti
  • Fold it to give a shape of a samosa
  • Repeat the same with the rest of the stuffing 
  • Now heat 3 tablespoons of oil in the tawa 
  • Place the samosas on the tawa and shallow fry them 
  • Flip over and cook till they are done 
  • Serve hot with accompaniment of your choice

WHEAT DOSA

Hi friends,
Wheat dosa is an instant dosa recipe. It is a healthy breakfast recipe and can be prepared easily at home.


Ingredients:
  • Atta or wheat flour - 1 cup
  • Salt - to taste
  • Water - 1 cup
  • Oil - 3 tablespoons 
Method:
To prepare the batter:
  • Take the Atta or wheat flour in a mixing bowl
  • Add the salt
  • Add the water to the Atta or wheat flour  to make a batter of pouring consistency 
  • Keep aside for 15 minutes 
To prepare the dosa:
  • Mix the batter well
  • Heat a tawa  or griddle 
  • Pour a dollop of the batter in the centre of the tawa 
  • Spread it out outward in a centripetal fashion to make a dosa (pancake)
  • Add a teaspoon of oil all around and over the dosa on the tawa
  • Once the dosa is cooked well
  • Flip it over and cook on the other side as well
  • Remove and serve with accompaniment of your choice

CUSTARD PUDDING

Hi friends,
Custard pudding can be prepared easily at home. I have given the recipe with the store-bought custard powder. 

Ingredients:

  • Milk - 1/2 a litre
  • Custard powder - 3 teaspoons
  • Almonds - 6, cut into thin slicesor slivers
  • Cashews - 6, cut into thin slices
  • Raisins - 6, cut into small pieces
  • Sugar - 2 tablespoons 
Method:
  • Take the custard powder and sugar in a mixing bowl
  • Add 3 tablespoons of milk
  • Mix well till the sugar dissolves 
  • Boil the rest of the milk in a pan
  • Add the custard powder dissolved milk to it
  • Mix well
  • Remove from the stove
  • Allow it to cool slightly 
  • Transfer to a serving bowl 
  • Add the cut almonds, cashews and raisins 
  • Keep in the refrigerator for 3-4 hours
  • After it has set completely, serve chilled

RAAGI ADAI WITH LEFTOVER RICE

Hi friends,
Ragi adai is a healthy breakfast recipe that can be made with left over rice.


Ingredients:
  • Rice - boiled, left over rice - 1 cup
  • Ragi flour - 3 tablespoons 
  • Water - 1/2 cup
  • Onion - 1, medium sized, finely chopped 
  • Green chilli - 1, finely chopped 
  • Curry leaves - a few
  • Salt - to taste 
  • Oil - for frying 
Method:
  • Re-heat the left-over rice
  • Mash it with a mashed or ladle
  • Alternatively, you can run it in a mixer grinder in pulse mode without adding water to mash it evenly
  • Add the ragi flour to it
  • Mix well
  • Boil the water 
  • Add the boiling hot water to the flour mixture and mix well with a ladle
  • Add the chopped onions, green chillies, curry leaves and salt 
  • Mix well to form a dough
  • Divide the dough into equal portions 
  • Roll each portion into a ball 
  • Flatten each ball into a circle
  • Heat the tawa  or griddle 
  • Place the ragi adai on the tawa
  • Add 1/2 a teaspoon of oil over it
  • Flip over and cook on the other side as well 
  • Repeat the same with the rest of the dough balls
  • Serve hot with accompaniment of your choice 
Tips:
  • To flatten the dough ball into a circle, you can use a plastic sheet or a banana leaf smeared with oil
  • Make sure you have enough oil on your hands as well

MACARONI PASTA IN WHITE SAUCE

Hi friends,
Macaroni pasta in white sauce is an all-time favourite recipe that can be had for breakfast, dinner or on a rainy evening too. It is especially liked by children.


Ingredients:

  • Macaroni - 1 cup
  • Onion - 1, medium sized, finely chopped 
  • Capsicum - 1, small, finely chopped 
  • Carrot - 1, medium sized, chopped 
  • Maida or refined flour - 1 tablespoon
  • Milk - 1 cup
  • Butter - 1 tablespoon + 1 tablespoon 
  • Cheese - grated - 3 tablespoons 
  • Salt - to taste 
  • Water - 4-5 cups 
  • Oil - 1 tablespoon 
Method:
  • Boil the water in a pan
  • Add the macaroni pasta in the water
  • Add the oil and 1/2 teaspoon of salt
  • Allow it to cook 
  • Once the pasta is cooked to al-dente perfection, transfer it to a colander and strain off the excess water 
  • Keep aside
  • Heat a tablespoon of butter in a pan
  • Add the chopped onions 
  • Sauté well till the onions turn transparent 
  • Add the chopped capsicum and carrot 
  • Sauté well 
  • Add salt and mix well
  • Remove and keep aside
  • Heat another tablespoon of butter in a pan
  • Add the maida
  • Sauté well till the maida is cooked well 
  • Add the milk
  • Mix well 
  • Add the sautéed onions and vegetables 
  • Mix well
  • Add the cooked pasta
  • Mix well
  • Grate cheese with the help of a hand-held grater
  • Serve hot

INSTANT KADHI

Hi friends,
This instant kadhi recipe is an easy to prepare one. It can be prepared within 15 minutes.
It can be had with phulka roti, pudina paratha or poori

Ingredients:

  • Besan or gram flour - 2 tablespoons 
  • Curd - 1/2 cup
  • Water - 1 cup
  • Salt - to taste 
  • Coriander leaves - a few, finely chopped 
  • Turmeric powder - 1/2 teaspoon 
  • Oil - 2 tablespoons 
  • Mustard seeds - 1/2 teaspoon 
  • Jeera or cumin seeds - 1/2 teaspoon 
  • Onion - 1, medium sized, finely chopped 
Method:
  • Take the curd in a mixing bowl 
  • Add the besan
  • Mix well with a whisk to avoid any lumps
  • Add salt and water
  • Whisk well
  • Keep aside 
  • Heat oil in a pan 
  • Add the mustard seeds and jeera
  • Sauté well 
  • Add the chopped onions
  • Sauté well till the onions turn transparent 
  • Add the salt and turmeric powder 
  • Sauté well
  • Add the curd-besan mixture 
  • Mix well
  • Cook covered with a lid 
  • Once it is cooked well, transfer to a serving bowl 
  • Add coriander leaves for garnishing 
  • Serve hot 
Tips:
  • You may add a teaspoon of sugar and mix well  before you transfer it to the serving bowl to get a feel of Gujarati version of this kadhi

PUDINA PARATHA

Hi friends,
Pudina paratha is a healthy version of roti. Pudina has a lot of medicinal benefits. It is supposed to improve digestion.

Ingredients:

  • Atta or wheat flour  - 1 cup
  • Pudina or mint leaves - chopped - 1/2 cup
  • Salt - to taste 
  • Oil - for frying 
  • Water - 1/2 - 3/4 cup
Method:
  • Take the Atta or wheat flour  in a bowl
  • Add the chopped mint leaves and salt
  • Mix well
  • Add water little by little and knead the Atta or wheat flour to form a dough
  • Cover and keep aside for 15 minutes 
  • Divide the dough into equal portions 
  • Roll each portion into a ball 
  • Roll out each ball into a flat circle 
  • Heat the tawa  or griddle 
  • Place the paratha on the tawa
  • Allow it to cook 
  • Add half a teaspoon of oil over it all around
  • Flip it over and cook on the other side as well 
  • Remove and serve hot with accompaniment of your choice

MATAR PANEER

Hi friends,
Matar paneer is a spicy gravy made with green peas and Indian cottage cheese.


Ingredients:
  • Paneer - 250 grams, cut into dices
  • Green peas - 1/2 cup
  • Onion - 1, medium sized
  • Tomato - 1, medium sized
  • Ginger - half inch piece
  • Garlic - 3-4 cloves
  • Jeera or cumin seeds - 1/2 teaspoon
  • Saunf or fennel seeds - 1/2 teaspoon
  • Cinnamon- half an inch piece
  • Cloves - 2
  • Oil - 2 tbsp 
  • Turmeric powder - half a teaspoon
  • Red chilli powder - 1 teaspoon 
  • Coriander powder - 1 teaspoon 
  • Garam masala powder - half a teaspoon
  • Salt to taste 
  • Water - 1 cup 
  • Coriander leaves for garnishing
Method:
  • Grind the onions, ginger, garlic, jeera and saunf into a paste in a mixer grinder
  • Heat oil in a pan 
  • Add the cinnamon, cloves
  • Sauté well 
  • Add the ground onion paste
  • Sauté well for a minute 
  • Add the turmeric powder, red chilli powder, coriander powder, garam masala powder and salt 
  • Sauté well 
  • Add the tomato paste
  • Sauté well
  • Add the green peas
  • Mix well
  • Add water 
  • Cook with the lid covered till the peas is cooked
  • Add the paneer
  • Keep stirring well till done
  • Garnish with chopped coriander leaves 
  • Serve hot with phulka roti or poori or as part of a meal with rice.
Tips:
  • If you do not have fresh green peas, you can use dried green peas too. But, make sure that you soak it in water for about 6-8 hours before using it in this recipe.

WHEAT UTHAPPAM

Hi friends,
Wheat onion uthappam is a healthy breakfast recipe. It can be prepared easily.


Ingredients:
  • Atta or wheat flour  - 1 cup
  • Salt - to taste
  • Water - 1 cup
  • Green chillies - 2, finely chopped 
  • Curry leaves - a handful
  • Onions - 1, sliced
  • Oil - 3 tablespoons 
Method:
To prepare the batter:
  • Take the Atta or wheat flour in a mixing bowl
  • Add the salt
  • Add the water to the Atta or wheat flour  to make a batter of pouring consistency 
  • Keep aside for 15 minutes 
To prepare the uthappam:
  • Mix the batter well
  • Heat a tawa or griddle 
  • Pour a dollop of the batter in the centre of the tawa 
  • Spread it out outward in a centripetal fashion to make a pancake
  • Sprinkle the onions and curry leaves over it
  • Add a teaspoon of oil all around and over the uthappam
  • Once the uthappam is cooked well
  • Flip it over and cook on the other side as well
  • Remove and serve with accompaniment of your choice

RICE ADAI WITH LEFTOVER RICE

Hi friends,
Left over rice can be used to make this rice adai recipe. It tastes really good. 
Ingredients:

  • Rice - boiled, left over rice - 1 cup
  • Rice flour - 3 tablespoons 
  • Onion - 1, medium sized, finely chopped 
  • Green chilli - 1, finely chopped 
  • Curry leaves - a few
  • Salt - to taste 
  • Oil - for frying 
Method:
  • Re-heat the left-over rice
  • Mash it with a mashed or ladle
  • Alternatively, you can run it in a mixer grinder in pulse mode to mash it evenly 
  • Add the rice flour to it
  • Mix well
  • Add the chopped onions, green chillies, curry leaves and salt 
  • Mix well to form a dough
  • Divide the dough into equal portions 
  • Roll each portion into a ball 
  • Flatten each ball into a circle
  • Heat the tawa  or griddle 
  • Place the rice adai on the tawa
  • Add 1/2 a teaspoon of oil over it
  • Flip over and cook on the other side as well 
  • Repeat the same with the rest of the dough balls
  • Serve hot with accompaniment of your choice 
Tips:
  • To flatten the dough ball into a circle, you can use a plastic sheet or a banana leaf smeared with oil
  • Make sure you have enough oil on your hands as well

VAZHAKKAI PODIMAS / RAW BANANA PEPPER BHURJI

Hi friends,
Raw banana pepper fry, also known as podimas, is a side-dish that can be had with sambar, spicy Indian gravy like kaara kulambu or kaara pulusu. It can be prepared easily at home.

Ingredients:

  • Raw banana - 1
  • Green chilli - 1, vertically slit 
  • Onions - 1, medium sized, finely chopped 
  • Curry leaves - a few
  • Turmeric powder - 1/2 teaspoon 
  • Salt - to taste 
  • Mustard seeds - 1/2 teaspoon 
  • Cumin seeds or jeera - 1/2 teaspoon 
  • Black Pepper powder - 1/2 teaspoon 
  • Oil - 2 tablespoons 
  • Water - 1 cup; to boil the raw banana
Method:
  • Cut the raw banana into 3 large cylindrical pieces 
  • Boil the water in a pan 
  • Place the raw banana pieces in water for about 3-4 minutes 
  • Remove from water
  • Allow it to cool slightly 
  • Grate the raw banana with a grater
  • Keep aside 
  • Heat the oil in a pan 
  • Add the mustard seeds, cumin seeds, curry leaves 
  • Once the seeds splutter, add the green chillies and chopped onions
  • Sauté well till the onions turn transparent 
  • Add the turmeric powder, black pepper powder and salt 
  • Sauté well 
  • Add the grated raw banana 
  • Mix well
  • Allow it to cook for 2 minutes 
  • Transfer to a serving bowl 
  • Serve hot with accompaniment of your choice

SPICY PAN ROASTED BOILED EGGS

Hi friends, 
Spicy, pan roasted boiled eggs is an easy to make side dish recipe that can be had with a variety of main course recipes.


Ingredients:

  • Eggs - 5; boiled and de-shelled 
  • Oil - 1 tablespoon 
  • Pepper powder - 1/2 teaspoon 
  • Red chilli powder - 1/2 teaspoon 
  • Turmeric powder - 1/4 teaspoon 
  • Salt - to taste 
Method:
  • Heat the oil in a pan
  • Add the red chilli powder, pepper powder, turmeric powder and salt
  • Mix well
  • Add the boiled eggs after making partial thickness slits on the eggs
  • Roast them till the eggs are coated with the powders evenly
  • Remove and serve with accompaniment of your choice

SABUDANA PARATHA

Hi friends,
Sabudana paratha is a healthy breakfast recipe. It can be prepared easily at home.


Ingredients:
  • Sabudana / Sago - 1 cup, soaked in 1 cup of water for 6-8 hours 
  • Garlic - 3-4 cloves, finely chopped 
  • Green chillies - 2-3, finely chopped 
  • Curry leaves - a few
  • Coriander leaves - a few
  • Potatoes - 2, medium sized, boiled and mashed
  • Groundnuts - 1/4 cup
  • Cumin seeds or jeera - 1 teaspoon 
  • Salt - to taste 
  • Oil - 3 tablespoons 
Method:

  • Dry roast the groundnuts in a pan
  • Allow it to cool slightly 
  • Grind it into a coarse powder in a mixer grinder 
  • Keep aside
  • Drain off the excess water from the sago
  • Transfer it to a mixing bowl
  • Add the chopped garlic and green chillies 
  • Mix well
  • Add the jeera, salt, curry leaves, coriander leaves and the potatoes 
  • Add the groundnut powder 
  • Mix well to form a dough
  • Divide the dough into equal portions 
  • Roll out each portion into a flat paratha 
  • Heat the tawa  or griddle 
  • Place the paratha on the tawa
  • Add half a teaspoon of oil all over it
  • Allow it to cook
  • Flip over and cook on the other side as well 
  • Remove 
  • Serve

IDIYAPPAM

Hi friends,
Idiyappam or string hoppers is a very easy to prepare breakfast recipe with the availability of store-bought processed rice flour. You can also use the regular rice flour to make them.


Ingredients:

  • Rice flour - 1 cup 
  • Salt - to taste 
  • Water - 1/2 - 3/4 cup
Method:
  • Take the rice flour in a mixing bowl 
  • Add the salt
  • Mix well
  • Boil water in a pan
  • Add the boiling water to the rice flour all over, so that the flour gets cooked and changes colour
  • Add just enough water to make a dough
  • Mix well with a spoon
  • Then, after it cools slightly, make a dough with the help of your hands

  • Divide the dough into equal portions 
  • Place it in a Idiyappam-maker 
  • Press and place the Idiyappams on a steamer  plate

  • Steam cook for 10 minutes in a steamer or pressure cooker
  • After 10 minutes, switch off the stove 
  • Remove the Idiyappam 


  • Serve hot with accompaniment of your choice

ONION UTHAPPAM

Hi friends,
Onion uthappam is an easy to prepare breakfast recipe. It can be prepared with the dosa batter itself.
But make sure that the batter is well-fermented.


Ingredients:
  • Idli rice (boiled rice) - 4 cups
  • Urad dal - 1 cup
  • Fenugreek seeds - 3 teaspoon
  • Salt - 3 tablespoons
  • Water - 6 cups
  • Green chillies - 2, finely chopped 
  • Curry leaves - a handful
  • Onions - 1, sliced
  • Oil - 3 tablespoons 
Method:
To prepare the batter:
  • Soak the rice, dal and fenugreek seeds in water for 4 hours
  • Drain off the water
  • Grind the urad dal and fenugreek seeds with 3 cups of water in a grinder for 15 minutes
  • Remove and keep aside
  • Grind the rice with 3 cups of water in a grinder for 12 minutes
  • Add the ground urad dal to the ground rice in the grinder
  • Add salt
  • Grind all this together for 3 minutes
  • Remove and keep aside
  • Allow the batter to ferment for 6 hours
  • Then you can store it in the refrigerator and use it as and when required within a week's time
To prepare the uthappam:
  • Remove the batter from the refrigerator at least 30minutes before you make the uthappam
  • Mix the batter well
  • Heat a tawa  or griddle 
  • Pour a dollop of the batter in the centre of the tawa 
  • Spread it out outward in a centripetal fashion to make a pancake
  • Sprinkle the onions and curry leaves over it
  • Add a teaspoon of oil all around and over the uthappam

GHEE ROAST DOSA

Hi friends,
Ghee roast dosa is an easy to prepare breakfast recipe. Dosa is a pancake made from rice and urad dal batter.

Ingredients:
  • Idli rice (boiled rice) - 4 cups
  • Urad dal - 1 cup
  • Fenugreek seeds - 3 teaspoon
  • Salt - 3 tablespoons
  • Water - 6 cups
  • Ghee - 3 tablespoons 
Method:
To prepare the batter:
  • Soak the rice, dal and fenugreek seeds in water for 4 hours
  • Drain off the water
  • Grind the urad dal and fenugreek seeds with 3 cups of water in a wet grinder  for 15 minutes
  • Remove and keep aside
  • Grind the rice with 3 cups of water in the wet grinder for 12 minutes
  • Add the ground urad dal to the ground rice in the wet grinder 
  • Add salt
  • Grind all this together in the wet grinder for another 3 minutes
  • Remove and keep aside
  • Allow the batter to ferment for 6 hours
  • Then you can store it in the refrigerator and use it as and when required within a week's time

RAGI PUTTU

Hi friends,
Ragi or fox tail millet is a rich source of calcium. Ragi Puttu is a steam-cooked recipe. It can be prepared easily at home. It can be had for breakfast or during evenings.


Ingredients:
  • Ragi flour - 1 cup
  • Water - 1/8-1/4 cup
  • Salt - to taste
  • Ghee or clarified butter - 2 tablespoons 
  • Freshly grated coconut - 3 tablespoons 
  • Sugar - 3 tablespoons 
  • Cardamom - 1
Method:
  • Take the ragi flour in a mixing bowl
  • Add the water little by little till the water just coats the flour
  • The flour should be like the crumble you make in many baking recipes 
  • Transfer it onto greased idli plates
  • Place it in the steamer 
  • Steam cook in the steamer for 10 minutes 
  • In the meantime, take ghee in a mixing bowl
  • Add the sugar, freshly grated coconut and cardamom 
  • Mix well
  • Keep aside
  • Remove the steam-cooked ragi flour from the steamer
  • Transfer to the sugar mixture in the mixing bowl
  • Mix well
  • Serve

KHAJA WITH ATTA

Hi friends,
Khaja is a sweet made in the South Indian states of Andhra Pradesh and Telangana. I share the recipe of khaja made with Atta or wheat flour . It can be prepared easily at home with a little effort.


Ingredients:

  • Atta or wheat flour  - 1 cup
  • Salt - 1/8 teaspoon 
  • Water - around half a cup; to knead the dough + 1/4 cup; to make sugar syrup 
  • Rice flour - 2 tablespoons 
  • Ghee or clarified butter - 2 tablespoons 
  • Sugar - 1/2 cup
  • Cardamom powder - 1/4 teaspoon 
  • Oil - for frying 

Method:

  • Knead the Atta or wheat flour  with salt and water to form a dough
  • Divide the dough into equal portions 
  • Make  balls
  • Keep aside for 10 minutes 

  • Roll out each portion into a flat circle as you would to make a roti


  •  Mix the ghee and rice flour to make a paste


  • Smear the ghee-rice flour paste onto the rolled out dough
  • Place the other on top of it 
  • Again, smear the paste on the top of the other rolled out dough
  • Repeat the same with the rest of the rolled out dough


  •  Roll the stacked dough into a cylinder
  • Cut across to form small bit


  •  It should look like this


  •  Flatten each of the smaller cut pieces to form a layered khaja


  • Make a sugar syrup by dissolving sugar in water
  • Boil it for 3 minutes to for a syrup
  • Keep aside


  • Heat oil in a kadai or wok


  •  Deep fry each of the khaja
  • Flip over and cook on the other side as well 


  •  Remove and dip it in the sugar syrup 


  •  Just coat it with the syrup
  • Keep aside


  • Allow it to cool
  • Store in an airtight container
