LIME - MINT COOLER || MINT FLAVOURED LEMON JUICE

Hi friends,
Lime-mint cooler is an absolute bliss to have on a sunny summer afternoon. It can be prepared easily at home.

Ingredients:
  • Water - 1 cup
  • Juice of a fresh lime - 1 tablespoon 
  • Mint leaves - 4-5
  • Sugar - 1 teaspoon 
  • Salt - a pinch
Method:
  • Take the water in a glass
  • Add the sugar and salt
  • Mix well till it dissolves
  • Add the juice of a fresh lime
  • Give it a nice mix
  • Add the mint leaves
  • Allow it to infuse the flavour to the water for a while and then serve
  • You may keep it in the refrigerator and serve chilled

LASSI || SWEET LASSI || SWEETENED BUTTERMILK

Hi friends,
Sweet Lassi or sweetened buttermilk is a refreshing drink for summer. The main ingredient is curd or yoghurt and the taste of the lassi depends on the taste of the curd. There are a lot of varieties of lassi made - sweet, salt, mint, masala, mango, rose lassi etc. Here I have shared the recipe of sweet lassi. It helps in keeping your body cool during the hot summers. It can be prepared easily at home. 


Ingredients:
  • Curd ( yoghurt / dahi) - 2 cups
  • Sugar - 3 tablespoons 
  • Cardamom (elaichi) powder - 1/4 teaspoon 
  • Water - 1/2 cup
Method:
  • Take the curd in a deep mixing bowl or a deep pan
  • Add the sugar and cardamom powder 
  • Whisk the curd with a hand whisk or a hand blender until smooth
  • Add the water
  • Whisk again for a couple of minutes until you see a nice frothy layer on top
  • Pour into glasses and serve
Tips:
  • Use homemade curd for better taste
  • You may use powdered sugar instead of sugar to quickly dissolve it
  • Use a wire whisk to whisk the curd manually

FRUIT CUSTARD || EGGLESS CUSTARD WITH SEASONAL FRUITS

Hi friends,
Eggless custard is a very easy recipe that can be prepared at home. It can be had with seasonal fruits or flavoured jelly pudding.


Ingredients:
  • Milk - 500 ml
  • Custard powder - 3 teaspoons 
  • Sugar - 3 tablespoons 
Method:
  • Boil the milk in a pan
  • Once the milk boils, simmer the flame of your stove
  • Take the custard powder in a small mixing bowl 
  • Add 50ml of the milk to the custard powder 
  • Mix well to make a smooth paste 
  • Add the paste to the milk 
  • Allow it to cook
  • Keep stirring well 
  • Add the sugar 
  • Keep stirring till it thickens to the desired consistency (flowing batter consistency)
  • Switch off the flame 
  • Allow it to cool down slightly 
  • Refrigerate for about 2 hours
  • Serve chilled with cut fruits of your choice

RAW MANGO SWEET PACHADI / MAANGA PACHADI / MAMIDIKAI PACHADI

Hi friends,
Raw mango sweet pachadi is a good accompaniment to be had with south-Indian dishes such as sambar and rasam or with north-Indian dishes such as Phulka roti, chapathi or poori



Ingredients:
  • Raw mango - 1, medium sized, grated 
  • Onion - 1, medium sized, finely chopped 
  • Green chilli - 1, slit vertically 
  • Jaggery - 1/3 cup
  • Mustard seeds - 1/2 teaspoon 
  • Jeera or cumin seeds - 1/2 teaspoon 
  • Split urad dal - 1/2 teaspoon 
  • Turmeric powder - 1/2 teaspoon 
  • Salt - 1/4 teaspoon 
  • Oil - 2 tablespoons 
  • Water - as required 
  • Curry leaves - a few
Method:
  • Heat oil in a Kadhai 
  • Add the mustard seeds, cumin seeds, split urad dal and curry leaves 
  • Add the green chilli and chopped onions 
  • Sauté well 
  • Add the turmeric powder and salt
  • Sauté for a minute 
  • Add the grated raw mango
  • Sauté for another minute 
  • Add about half a cup of water 
  • Cook in the Kadhai covered with a lid for about five minutes 
  • Remove the lid from the Kadhai 
  • Add the jaggery 
  • Mix well
  • Keep stirring till the desired consistency is reached 
  • Serve with Phulka roti or poori or sambar rice or rasam as part of a meal.
