BOONDI

Hi friends,
Boondi is an Indian sweet recipe which is made for several occasions especially in south-indian marriages. It is served along with the meal during weddings.
 

INGREDIENTS:
  • Besan (Gram flour) - 1 cup
  • Water - 3/4-1 cup
  • Food color - optional
  • Sugar - 1 cup
  • Oil - for deep frying
  • Ghee or clarified butter - 3tbsp
  • Cashews-6nos
  • Raisins-6nos
  • Cloves- 3nos
  • Cardamom powder- 1tsp
  • Salt- a pinch
METHOD:
  • Prepare a batter with besan, Salt, food color and 1/4-1/2 cup of water to get pouring consistency
  • Heat oil in a kadai/wok
  • Add ghee or clarified butter to the oil to enhance the flavour of the fried boondis
  • Pour the batter onto a Boondi ladle 
  • Fry the Boondis
  • Remove from oil with the help of a deep fry strainer and keep aside
  • Boil sugar in 1/2cup water till 1string consistency
  • Roast raisins, cashews, cloves in ghee (clarified butter)
  • Add it to the Boondis
  • Add the sugar syrup while it is still hot and cardamom powder
  • Mix well with a ladle
  • Store in an air-tight container once it cools.
Note:
  • Food color is optional, but Usually yellow, red, green and pink are used
  • You can prepare of batches of Boondis with different colors and mix all of them finally to get the multi-color Boondis
  • The multi-color Boondis look appealing to the eyes
  • The size of the Boondis depend on the size holes in the punched out ladle used to prepare Boondis. Hence, that is purely your choice.
