SWEET SOMAS WITH COCONUT STUFFING

Hi friends,
Sweet Somas is a traditional south-indian sweet recipe that is made during special occasions and festivals like Diwali.

The sweet Somas has an outer cover made of refined flour. The inner stuffing can be made according to our wish. The most common ones are the coconut stuffing and the fried gram stuffing. I shall share the recipe for the sweet Somas with the coconut stuffing in this post.

For the outer cover:
INGREDIENTS:
  • Refined flour - 1 cup
  • Rava / Semolina- 3tsp
  • Salt - 1tsp
  • Butter / ghee or clarified butter - 1tsp 
  • Water - 1/4-1/2 cup
Knead all the above ingredients to make a stiff dough
Allow it to rest for 15minutes

For the coconut stuffing:
Ingredients:
  • Grated coconut- 1cup
  • Powdered Sugar - 1/2 cup
  • Cardamom powder-1tsp
  • Ghee or clarified butter - 3-4tsp
  • Cashews - 6nos; chopped
  • Raisins - 6nos; chopped
METHOD:
  • Heat ghee or clarified butter in a pan
  • Add cashews and raisins
  • Add the grated coconut
  • Saute well
  • Add the powdered sugar and cardamom powder
  • Mix well
  • Allow it to cool
To assemble and make the Somas:
INGREDIENTS:

  • The dough
  • The coconut stuffing
  • Oil for deep frying
  • Water - 1/4 cup
METHOD:
  • Divide the dough into small portions
  • Make balls with them
  • Flatten each ball into a round disc
  • Place about 1-1.5 tsp of the coconut stuffing on one half of the circular dough
  • Cover it over with the other half of the circle
  • Wet the inner edge of the circle with water and seal the edges
  • Heat oil in a wok / kadai
  • Deep fry the prepared Somas in hot oil
  • Remove from oil
  • Allow it to cool 
  • Store in an airtight container

Hi friends,

In this post, I shall share the recipe with fried gram stuffing.

For the outer cover:
INGREDIENTS:
  • Refined flour - 1 cup
  • Rava / Semolina - 3tsp
  • Salt - 1tsp
  • Butter / ghee or clarified butter - 1tsp 
  • Water - 1/4-1/2 cup
Knead all the above ingredients to make a stiff dough
Allow it to rest for 15minutes

For the fried gram stuffing:
Ingredients:
  • Fried gram-  1/2 cup; powdered in a mixer grinder to a coarse powder
  • Powdered Sugar - 1/4cup
  • Cardamom powder-1tsp
  • Ghee or clarified butter - 1 tsp
  • Cashews - 6nos; chopped
  • Almonds - 6nos; chopped
METHOD:
  • Heat ghee or clarified butter in a pan
  • Add cashews and raisins
  • Add the powdered fried gram
  • Saute well
  • Add the powdered sugar and cardamom powder
  • Mix well
  • Allow it to cool


To assemble and make the Somas:

  • Oil for deep frying

METHOD:

CORN FLAKES MIXTURE

Hi friends,
Diwali is not complete without a mixture in my Diwali platter. There are different varieties of mixture made all over India. The most common mixture that we make at our house is the cornflakes mixture. It is very easy to make.


INGREDIENTS:
  • Cornflakes- 250 gms
  • Aval (Rice flakes) - 100 gms
  • Peanuts - 100 gms
  • Fried gram- 100 gms
  • Curry leaves - a handful
  • Red chilli powder- 2-3tsp (depending on the desired spiciness)
  • Salt - to taste
  • Oil - for deep frying
METHOD:
  • Heat oil in a kadai/ wok
  • Deep fry the corn flakes in batches
  • I prefer using the mesh strainer for this, it makes my job easier!
  • Place it on a kitchen tissue to drain off the excess oil 
  • Similarly deep-fry the peanuts, followed by the fried gram
  • I use the mesh strainer for this too, you may also use the puri strainer or the regular strainer for this
  • Deep fry the rice flakes in batches
  • Place it on a kitchen tissue to drain off the excess oil 
  • Lastly, fry the curry leaves till they turn crisp
  • Add red chilli powder and salt to the fried ingredients when they are still hot
  • Mix all the fried ingredients 
  • Allow it to cool
  • Store in an airtight container

SULIYAN / SUSIYAM

Hi friends,
Suliyan /Susiyam is a traditional sweet recipe of tamilnadu made during special occasions, especially during deepavali. It is very easy and simple recipe.

TO MAKE THE STUFFING:

INGREDIENTS:
To be pressure cooked for 10mins on medium flame
  • Chana dal-1/2 cup
  • Water - 1 cup
Other ingredients
  • Grated coconut-1/3 cup
  • Jaggery-1/2 cup
  • Water-1/4 cup
  • Cardamom powder-1tsp
METHOD:
  • Melt Jaggery in water 
  • Strain it
  • Mash the cooked chana dal
  • Add it to the strained jaggery syrup in a pan
  • Add coconut and cardamom powder
  • Keep stirring on low-medium flame till it thickens
  • Remove from fire,allow it to cool
  • Grind to a smooth paste in a mixer grinder 
  • Divide it into smaller portions
  • Make round balls with each portion
TO MAKE THE OUTER COVER: 

INGREDIENTS:
  • Refined flour-1/2 cup
  • Salt- a pinch
  • Water-1/4 cup
METHOD:
  • Mix the above ingredients to make a batter of semi-solid consistency
TO MAKE THE SULIYAN / SUSIYAM:

INGREDIENTS:
  • Chana dal Stuffing
  • Refined flour Batter
  • Oil for deep frying
METHOD:
  • Take the balls of the stuffing 
  • Dip it in the batter
  • Deep Fry them in Oil
  • Remove it from Oil and place it on a kitchen tissue (paper towel) to drain the excess oil
  • Serve

Diwali is festival that is celebrated all over India. It has several mythological significance. It marks the beginning of new financial year for many people involved in businesses. It is very auspicious to start any good thing during Diwali.
Usually, goddess Lakshmi is worshipped during the festival, to bring prosperity to the family.
We, usually celebrate an eco-friendly or green Diwali by not bursting crackers.

HOW TO ARRANGE GOLU DOLLS FOR NAVARATRI GOLU

Hi friends,
Golu is the most important part of navaratri in the south-indian state of Tamil nadu. Golu refers to the arrangement of dolls in an organised manner in different steps or padis of the golu stand. I remember my mother telling me stories about navaratri Golu that used to be kept in my grandmother's house during her childhood. There is a way of organising the golu dolls in each step of the golu stand.
Ideally, the golu stand consists of nine steps signifying the nine days and nights of navaratri.
Step 1:
The topmost step of the golu has the goddess in any form in the centre with idols of Lord Shiva, Vishnu and Brahma with their respective consorts namely, Goddess Parvati, Lakshmi and Saraswati by their sides; placed on either side of the main idol kept in the centre.
Step 2:
In the step next to that of the gods is usually placed the idols of Thevargal, Navagrahas, Nayanmargals
Step 3:
The next step is occupied by rishis, Mahaans and munivargals
Step 4:
The next step is arranged with dolls of Human beings, famous celebrities
Step 5:
The birds and animals are arranged in this step
Step 6:
This step is occupied by various insects and fishes
Step 7:
Various handmade dolls, dolls made of sea shells and other craft work can be placed in this step
Step 8:
This step is occupied by manmade structures like replicas of temple gopurams, temple tanks, famous buildings
Step 9:
The bottom most step has miniature dolls of plants, vegetables and fruits

It is not compulsory that Golu has to be kept in nine steps. You can arrange a 3-step, 7-step, 5-step Golu also.
The highlight of this year's Golu dolls is athivaradar Golu set. There a variety of dolls of athivaradar sets available in the market, both the lying down pose and standing pose. There are also sets of athivaradar lying in the anathasaras pond. There are dolls of athivaradar made from fig tree itself available in the market.

FRIED CHANA DAL

Spicy fried chana dal is a very easy and simple indian snack recipe. it can be easily made at home. Once made, it can be stored in an air-tight container for about a week.

ATHIRASAM



Hi friends,
Athirasam is a commom sweet that is made during deepavali in the south Indian state of Tamilnadu. It is an easy and simple recipe. It is also made on the occasion of Kedara Gowri Vratham that is celebrated on the Amavasya during deepavali.
INGREDIENTS:
  • Raw Rice – 1 cup
  • Jaggery – ¾ cup
  • Cardamom powder – ½ tsp
  • Oil or ghee (clarified butter) for deep frying
METHOD:
  • Soak the raw rice in water for about half an hour
  • Drain the water completely and spread the rice on a kitchen towel
  • Allow it to dry for about half an hour
  • Grind the rice in a mixer grinder   when it is still slightly wet
  • Sieve it and keep aside
  • Dissolve jaggery in ¼ cup of water
  • Strain it
  • Boil the jaggery syrup till ball consistency (when boiling the jaggery syrup, take a drop of it and  add it in a small plate of water; when you try to move it, you should be able to make a ball with it- this is what I call “the ball consistency”) 
  • Add this jaggery syrup to the raw rice flour
  • Add the cardamom powder
  • Mix well
  • This should be kept in the refrigerator for 1-2 days and then you should make the athirasams
  • On the day of making the athirasams, take the dough 
  • Divide it into smaller portions
  • Make small balls with each portion
  • Press each ball to make round athirasams of desired size
  • Fry them in hot oil or ghee (clarified butter)
  • Store in an airtight container

PAYATHA MAAVU LADDU / MOONG DAL LADDU/ GREEN GRAM FLOUR LADDOO

Hi friends,

Payathamavu / whole moong dal (green gram) flour laddu is a very easy and simple sweet recipe. Green gram is nutritious to both children and adults. This laddu can be made easily at home.

INGREDIENTS:

  • Payathamavu/ green gram / whole moong dal flour - 1 cup
  • Powdered Sugar - 1/2-3/4 cup; depending on the desired level of sweetness
  • Ghee or clarified butter - 1/2-3/4 cup 
  • Cardamom powder- 1tsp
  • Cashews - 6 nos; chopped
  • Raisins - 6 nos; chopped
METHOD:
  • Dry roast the flour in a wok / kadai till the flour emits the raw smell
  • Remove from fire
  • Add the powdered sugar and cardamom powder
  • Mix well
  • Heat ghee or clarified butter in a pan
  • Add the chopped cashews and raisins
  • Add to the flour
  • Melt ghee and keep adding it to the flour as you keep mixing it with a ladle
  • Once it cools slightly, make laddus with your hands
  • Serve or store in an airtight container

PORI URUNDAI / PUFFED RICE BALLS MADE WITH JAGGERY

Hi friends,

Pori urundai is a traditional sweet recipe made in South India. They are basically balls made of puffed rice and jaggery. It is a simple recipe and can be made easily at home.

INGREDIENTS:

  • Pori / puffed rice- 1 cup
  • Jaggery - 1/2 cup
  • Water - less than 1/4 cup
  • Cardamom powder - 1 tsp
  • Sukku (Dried ginger) powder - 1/2 tsp
  • Ghee or clarified butter - 2 tablespoons 
METHOD: 
  • Dissolve jaggery in water
  • Strain it
  • Heat the strained Jaggery syrup till you get a single string consistency
  • Add this to the puffed rice
  • Add the cardamom powder and the dried ginger powder
  • Mix well
  • Once it cools slightly, smear the ghee or clarified butter on your palms and make round balls With the mixture
  • Serve or store in an airtight container

SALTED FRIED MOONG DAL

Salted fried moong dal is an easy and simple indian snack. It can be made and stored for atleast a week.

MASALA PORI / SPICY MURMURI (PUFFED RICE)

Masala Pori / Spicy Murmuri (Puffed rice) is a very easy and simple indian snack recipe. It is a low calorie snack and hence an ideal snack for the weight-watcher and for diabetics. It can be made easily at home and can be relished as an evening snack especially during the monsoon.

INGREDIENTS:

  • Pori / Puffed rice / Murmuri - 1 cup
  • Mustard seeds - 1 tsp
  • Cumin seeds / Jeera - 1 tsp
  • Garlic - 3 cloves finely chopped
  • Red chillies - 3 nos
  • Turmeric powder- 1/2 tsp
  • Asafoetida-1tsp
  • Curry leaves - a handful
  • Oil - 3 tsp

COOKING TIP OF THE DAY 3

Hi friends,

Indian cuisine’s one of the favourite recipe is Dosa! Dosas made in cast iron tawa / griddle have an unique taste. All of us who have been cooking with cast iron tawa, would have faced this problem at least once in a lifetime.

 I share with you a tip that has been handed to me over generations.

  • Whenever you clean the cast iron tawa, it becomes difficult to make dosas since the batter keeps sticking to the tawa.
  • To avoid this, heat the tawa
  • Add a tsp of oil
  • Add 2tsp of urad dal (black gram) 
  • Spread it all around the tawa and fry it
  • Remove the dal once it turns brown
  • Now, you will be able to make dosas with the batter easily without any hassle
Note:
In case it is a new tawa, you can season it by frying the dal 2-3 times before you start making dosas.


This tip has been tried and tested over years. Hope it will be useful for you all too.

Hi friends,

Ribbon Pakoda is an easy and simple indian snack recipe. It can be easily made at home during festivals and special occasions.

INGREDIENTS:
  • Rice flour - 1 cup
  • Pottukadalai / fried gram flour - 1/2 cup
  • Besan - 3 tsp
  • Butter - 50g
  • Red Chilli powder - 1 tsp
  • Salt - to taste
  • Water - 1/2-3/4 cup
  • Oil for deep frying
METHOD:
  • Seive the rice flour, Besan and fried gram flour
  • Add the butter and mix well (similar to the process of crumbling while preparing cake dough)
  • Add the red chilli powder and salt 
  • Mix well
  • Add the water to the flour to make a dough
  • Cover it with a muslin cloth
  • Allow it to rest for 10 minutes
  • Grease the sev maker with oil
  • Fill the sev maker with the dough
  • Prepare ribbon pakodas of desired shapes and thickness based on the patterned disc you are using
  • Deep fry the ribbon pakodas in hot oil
  • Remove from oil with the help of a puri strainer or the regular strainer 
  • Place it on a kitchen tissue to drain off the excess oil 
  • Allow it to cool
  • Store in an air-tight container

EASY AND TASTY EVENING SNACK - MURUKKU / CHAKLI #murukku #murukkurecipe #diwalisnacks #deepavalisnacks

Hi friends,

Murukku / Chakli is a common snack that is made during special occasions like Deepavali and Krishna Janmashtami in South India. 

INGREDIENTS:
  • Rice flour - 1 cup
  • Urad dal flour - 1/4 cup
  • Butter - 1 tbsp
  • Jeera or cumin seeds - 2 teaspoon 
  • Asafoetida - 1 tsp
  • Salt - to taste
  • Water - 1/4 - 1/2cup
  • Oil for deep frying
METHOD:
  • Seive the rice flour and urad dal flour
  • Add the butter and mix well (similar to the process of crumbling while preparing cake dough)
  • Add the jeera and mix well
  • Add the asafoetida and salt to the water
  • Now, add the water to the flour
  • Make a dough
  • Cover it with a muslin cloth
  • Allow it to rest for 10 minutes
  • Grease the murukku maker or sev maker  with oil
  • Fill the murukku maker or sev maker with the dough
  • Prepare murukkus of desired shapes and thickness based on the patterned disc you are using
  • Deep fry the murukkus in hot oil
  • Remove from oil with the help of a puri strainer or the regular strainer 
  • Place it on a kitchen tissue to drain off the excess oil
  • Allow it to cool
  • Store in an air-tight container
  • Note:

    You may add white sesame seeds instead of jeera; to add flavour to the Murukku.
