CHIKOO / SAPOTA / SAPODILLA MILKSHAKE BY POORNAGRAHINI

Hi friends,
Chikoo or sapota or sapodilla milkshake is a yummy, refreshing drink for summer. 


Ingredients:
  • Chikoo / sapota / sapodilla - 2 
  • Milk - 2.5 cups
  • Sugar - 2 tablespoons, depending on the desired level of sweetness 
  • Cardamom (elaichi) powder - 1/4 teaspoon 
Method:
  • Wash the sapodilla and peel off the skin
  • Cut it, deseeed it and chop it into smaller pieces
  • Transfer it to a blender 
  • Add the milk, sugar and cardamom powder 
  • Blend it well
  • Pour into glasses and serve
Tips:
  • Use ripe sapodillas for the best taste
  • You may use powdered sugar instead of sugar to quickly dissolve it
  • You may add ice-cubes before serving if you wish to

ELANEER PAYASAM || TENDER COCONUT KHEER || POORNA GRAHINI

Hi friends,
Elaneer payasam or Tender coconut kheer, a dessert made with fresh tender coconut water and coconut milk, is an ideal refreshing drink for summer. It cools down the body well. 


Ingredients:
  • Milk - 2 cups
  • Coconut milk - 3/4 cup
  • Tender coconut water - 1/2 cup
  • Tender coconut pulp or flesh - cut into pieces - 1/2 cup
  • Sugar - 1/4 cup; you may add according to the desired level of sweetness 
  • Cardamom powder - 1/2 teaspoon 
Method:
  • Boil the milk in a  pan till it reduces to 1 and half cup
  • Add the sugar
  • Stir well till it dissolves completely 
  • Allow it to cool down
  • In a large mixing bowl  , take the coconut milk
  • Add the tender coconut water, the chopped tender coconut flesh and cardamom powder 
  • Give it a nice stir
  • Add the boiled and cooled sweetened milk to this
  • Mix well
  • Keep it in the refrigerator   and Serve it chilled and enjoy the heavenly taste

LIME - MINT COOLER || MINT FLAVOURED LEMON JUICE

Hi friends,
Lime-mint cooler is an absolute bliss to have on a sunny summer afternoon. It can be prepared easily at home.

Ingredients:
  • Water - 1 cup
  • Juice of a fresh lime - 1 tablespoon 
  • Mint leaves - 4-5
  • Sugar - 1 teaspoon 
  • Salt - a pinch
Method:
  • Take the water in a glass
  • Add the sugar and salt
  • Mix well till it dissolves
  • Add the juice of a fresh lime
  • Give it a nice mix
  • Add the mint leaves
  • Allow it to infuse the flavour to the water for a while and then serve
  • You may keep it in the refrigerator and serve chilled

LASSI || SWEET LASSI || SWEETENED BUTTERMILK

Hi friends,
Sweet Lassi or sweetened buttermilk is a refreshing drink for summer. The main ingredient is curd or yoghurt and the taste of the lassi depends on the taste of the curd. There are a lot of varieties of lassi made - sweet, salt, mint, masala, mango, rose lassi etc. Here I have shared the recipe of sweet lassi. It helps in keeping your body cool during the hot summers. It can be prepared easily at home. 


Ingredients:
  • Curd ( yoghurt / dahi) - 2 cups
  • Sugar - 3 tablespoons 
  • Cardamom (elaichi) powder - 1/4 teaspoon 
  • Water - 1/2 cup
Method:
  • Take the curd in a deep mixing bowl or a deep pan
  • Add the sugar and cardamom powder 
  • Whisk the curd with a hand whisk or a hand blender until smooth
  • Add the water
  • Whisk again for a couple of minutes until you see a nice frothy layer on top
  • Pour into glasses and serve
Tips:
  • Use homemade curd for better taste
  • You may use powdered sugar instead of sugar to quickly dissolve it
  • Use a wire whisk to whisk the curd manually

FRUIT CUSTARD || EGGLESS CUSTARD WITH SEASONAL FRUITS

Hi friends,
Eggless custard is a very easy recipe that can be prepared at home. It can be had with seasonal fruits or flavoured jelly pudding.


Ingredients:
  • Milk - 500 ml
  • Custard powder - 3 teaspoons 
  • Sugar - 3 tablespoons 
Method:
  • Boil the milk in a pan
  • Once the milk boils, simmer the flame of your stove
  • Take the custard powder in a small mixing bowl 
  • Add 50ml of the milk to the custard powder 
  • Mix well to make a smooth paste 
  • Add the paste to the milk 
  • Allow it to cook
  • Keep stirring well 
  • Add the sugar 
  • Keep stirring till it thickens to the desired consistency (flowing batter consistency)
  • Switch off the flame 
  • Allow it to cool down slightly 
  • Refrigerate for about 2 hours
  • Serve chilled with cut fruits of your choice

RAW MANGO SWEET PACHADI / MAANGA PACHADI / MAMIDIKAI PACHADI

Hi friends,
Raw mango sweet pachadi is a good accompaniment to be had with south-Indian dishes such as sambar and rasam or with north-Indian dishes such as Phulka roti, chapathi or poori



Ingredients:
  • Raw mango - 1, medium sized, grated 
  • Onion - 1, medium sized, finely chopped 
  • Green chilli - 1, slit vertically 
  • Jaggery - 1/3 cup
  • Mustard seeds - 1/2 teaspoon 
  • Jeera or cumin seeds - 1/2 teaspoon 
  • Split urad dal - 1/2 teaspoon 
  • Turmeric powder - 1/2 teaspoon 
  • Salt - 1/4 teaspoon 
  • Oil - 2 tablespoons 
  • Water - as required 
  • Curry leaves - a few
Method:
  • Heat oil in a Kadhai 
  • Add the mustard seeds, cumin seeds, split urad dal and curry leaves 
  • Add the green chilli and chopped onions 
  • Sauté well 
  • Add the turmeric powder and salt
  • Sauté for a minute 
  • Add the grated raw mango
  • Sauté for another minute 
  • Add about half a cup of water 
  • Cook in the Kadhai covered with a lid for about five minutes 
  • Remove the lid from the Kadhai 
  • Add the jaggery 
  • Mix well
  • Keep stirring till the desired consistency is reached 
  • Serve with Phulka roti or poori or sambar rice or rasam as part of a meal.

PARUPPU PODI or GUN POWDER or SENAGALA KARAM PODI

Hi friends,
Paruppu podi is a spice and lentil powder that is usually mixed with hot steam-cooked rice and ghee or clarified butter.  It is a very common recipe in south indian cuisine. I share my recipe of paruppu podi.


INGREDIENTS:
  • Toor dal - 1/2 cup
  • Urad dal - 1/4
  • Chana dal - 1/4 cup
  • Fried gram - 1/4 cup
  • Red Chillies - 6-8, depending on the desired level of spiciness 
  • Black Pepper corns - 1 teaspoon 
  • Asafoetida - 1 teaspoon 
  • Salt - 1 tablespoon 
  • Curry leaves - a handful (optional)

METHOD:
  • Dry roast all the above ingredients one by one in a kadai for 3-4 minutes 
  • Allow it to cool 
  • Grind to a fine powder in a mixer grinder 
  • Store in an airtight container
  • Use it as and when required
Note:
  • You can grind it in a mixer grinder  if you are doing in small quantities
  • Else you can grind it in a nearby flour mill where they have separate machine for grinding masala powders as well.

POHA | HEALTHY BREAKFAST RECIPE

Hi friends,
Poha is a healthy, delicious, easy to prepare Indian breakfast recipe. It is a popular breakfast in Maharashtra, a state situated in the western part of India. It is a wholesome breakfast. I would also recommend you to check my other breakfast recipes for some delicious and easy breakfast ideas.

Ingredients:
  • Poha / Aval (Flattened rice flakes) - 1 cup
  • Potatoes - 1/2 cup, boiled and diced into cubes
  • Oil - 1 tablespoon 
  • Mustard seeds - 1 teaspoon 
  • Asafoetida / Hing - 1/8 teaspoon 
  • Dried red chillies, long - 2-3, depending on the desired level of spiciness 
  • Peanuts - 2 tablespoons 
  • Onion - 1/2 cup, finely chopped 
  • Carrot - 1/4 cup, finely chopped 
  • Beans - 1/4 cup, finely chopped 
  • Capsicum - 1/4 cup, finely chopped, optional 
  • Green chillies - 1, vertically slit
  • Turmeric powder- 1/2 teaspoon 
  • Curry leaves - 10
  • Lemon juice - 1 tablespoon 
  • Coriander leaves - finely chopped 
  • Salt - to taste 
Method:
  • Take the poha in a colander and wash it well with water
  • Allow it to drain the water completely 
  • Heat the oil in a pan or kadai
  • Add the mustard seeds, asafoetida, curry leaves, dried red chillies and peanuts
  • Sauté well
  • Add the chopped onions and slit green chilli 
  • Sauté well 
  • Add the chopped carrot, beans and capsicum 
  • Sauté well
  • Add the turmeric powder and salt
  • Mix well
  • Add the diced potatoes 
  • Stir well
  • Add the poha
  • Mix well
  • Switch off the flame 
  • Add the lemon juice and half of the chopped coriander 
  • Transfer it to a serving bowl 
  • Garnish with chopped coriander leaves 
  • Serve hot

ALOO PARATHA || PUNJABI BREAKFAST

Hi friends 
Aloo (potato) ka paratha or aloo paratha is one of my all-time favourite breakfast or dinner recipe. It’s a “wholesome meal”. It’s made of whole wheat flour. It’s a healthy recipe. It can be easily prepared at home. 
It can be had with onion raitha or my sautéed version of the onion raitha or plain curd.

Ingredients:

For the dough:
  • Atta or whole wheat flour - 2 cups
  • Ghee or clarified butter - 2 tablespoons 
  • Salt - to taste 
  • Water - as required 
For the stuffing:
  • Potatoes (Aloo) - 2 medium sized, boiled, peeled and mashed
  • Ghee or clarified butter - 1 tablespoon 
  • Jeera or cumin seed powder - 1 teaspoon 
  • Turmeric powder- 1/2 teaspoon 
  • Red chilli powder- 1 teaspoon 
  • Coriander powder - 1 teaspoon 
  • Amchur (dry mango) powder - 1teaspoon
  • Salt - to taste 
Method:

For the dough:
  • Combine the atta or whole wheat flour, ghee and salt in a mixing bowl 
  • Add water as required and knead to form a smooth dough
  • Divide the dough into equal portions 
  • Roll it into a ball
  • Keep aside 

For the stuffing:
  • Heat ghee or clarified butter in a pan or kadai 
  • Add the jeera powder, turmeric powder, red chilli powder, coriander powder 
  • Add the mashed potatoes and salt 
  • Switch off the flame 
  • Mix well
  • Allow it to cool slightly 
  • Divide it into equal portions as the number of dough balls
To make the parathas:
  • Roll out a dough ball into a small circle
  • Place a portion of the stuffing in the centre
  • Bring all the sides to the centre and seal tightly 
  • Roll it into a ball
  • Roll it out into a circle sprinkling it with a little whole wheat flour 
  • Repeat the same with the rest of the dough balls 
  • Heat a tawa or griddle 
  • Place the rolled out paratha in the centre of the tawa
  • Allow it to cook
  • Flip it over and cook it on the other side as well
  • Apply ghee on it on either sides and cook till done
  • Serve hot with plain curd or onion raitha or my sautéed version of the onion raitha and choice of pickle

PALAK PANEER MASALA

Hi friends,

Palak paneer is a healthy recipe that can be made for breakfast, lunch or dinner. It is a very commonly prepared dish in every North Indian household. It is a good option for children who refuse to have spinach. The puréed form of spinach with the paneer (cottage cheese) is a favourite among kids too. It can be paired with phulka roti, chapathi, poori, plain rice, ghee rice, veg brinji or vegetable biryani.


Ingredients:

  • Spinach / Palak - 6 cups ( washed and cleaned)
  • Paneer cubes - 1 cup
  • Sliced Onions - 1 cup
  • Cashews - 3 tablespoons, roughly chopped
  • Green chillies - roughly chopped- 1.5 tablespoons
  • Oil - 2 teaspoons
  • Butter - 1 teaspoon
  • Ginger paste - 1 teaspoon
  • Garlic paste - 1 teaspoon
  • Tomato - finely chopped - 1/4 cup
  • Kasuri methi (Dried fenugreek leaves) - 1 teaspoon
  • Sugar - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Fresh cream - 1/4 cup
  • Salt - to taste


Method:

  • Blanch the spinach in a pan of boiling water for about three minutes 
  • Drain the hot water
  • Rinse the blanched spinach with cold water
  • Allow it to cool for a while
  • Blend the blanched spinach in a mixer to make a smooth purée 
  • Keep aside 
  • Boil a cup of water in a pan
  • Add the sliced onions, chopped cashews and chopped green chillies to the boiling water 
  • Simmer for about 15 minutes
  • Allow it to cool
  • Blend in a mixer to a smooth paste
  • Keep aside
  • Heat oil and butter in a kadai
  • Add the ginger paste, garlic paste and chopped tomatoes
  • Sauté well on medium heat for about two minutes
  • Add the cashew onion paste
  • Sauté well for a minute
  • Add the spinach purée, 3/4 cup of water, and salt
  • Cook in medium heat for two minutes
  • Add the Kasuri methi, and garam masala
  • Cook in medium heat for a minute
  • Add the paneer cubes and fresh cream
  • Mix well
  • Cook in medium heat for 2-3 minutes till the desired consistency is reached
  • Serve hot with phulka roti, chapathi, poori, plain rice, ghee rice, veg brinji or vegetable biryani.

SPICY CHILLI IDLI WITH LEFTOVER IDLIS

Hi friends,
Idli is the most common breakfast in the South Indian state of Tamilnadu. We usually land up having leftovers after any meal any day. When you have leftover idlis, you have plenty of options to make. I have shared my recipe of leftover idlis and named them spicy chilli idli.


Ingredients:
  • Idlis (leftover) - 6, cut into desired size
  • Onion - 1, chopped 
  • Green chilli - 1, vertically slit
  • Jeera (Cumin seeds) powder - 1/2 teaspoon 
  • Ginger - 1/4 inch piece- chopped 
  • Garlic - 3 cloves, finely chopped 
  • Garam masala - 1/2 teaspoon 
  • Tomato ketchup - 2 tablespoons 
  • Red chilli powder - 2 teaspoon 
  • Coriander powder - 1 tablespoon 
  • Turmeric powder - 1/4 teaspoon 
  • Salt - to taste 
  • Oil - 3 tablespoons + 2 tablespoons 
  • Water - 1/2 cup

Method:
  • Heat oil in a pan
  • Add the cut idlis and fry them in low-medium flame
  • Remove and keep it aside
  • Heat some more oil in the same pan
  • Add the slit green chilli, chopped onions, garlic and ginger
  • Sauté well 
  • Add the jeera powder, turmeric powder, red chilli powder, coriander powder, garam masala and salt
  • Sauté well 
  • Add water
  • Cook covered with a lid 
  • Open the lid and once the water evaporates, add the fried idlis
  • Sauté well 
  • Add the tomato ketchup 
  • Sauté well 
  • Serve hot

POTTU KADALAI MAAVU MURUKKU

Hi friends,
Murukku or Chakli are one of the favourite savoury recipes of Indians. It can be prepared with a combination of different ingredients. This one is a recipe with fried gram and rice flour. Hope you also try this and enjoy.

INGREDIENTS:
  • Rice flour - 1 cup
  • Fried gram flour (pottu Kadalai Maavu)- 1/4 cup
  • Butter - 1 tbsp
  • Cumin seeds or jeera - 2 teaspoon (optional)
  • Asafoetida - 1 tsp
  • Salt - to taste 
  • Water - 1/4 - 1/2cup
  • Oil for deep frying
METHOD:
  • Seive the rice flour and fried gram flour
  • Add the butter and mix well (similar to the process of crumbling while preparing cake dough)
  • Add the asafoetida and salt to the water
  • Now, add the water to the flour
  • Make a dough
  • Cover it with a muslin cloth 
  • Allow it to rest for 10 minutes
  • Grease the murukku maker or sev maker  with oil 
  • Fill the murukku maker or sev maker with the dough
  • Prepare murukkus of desired shapes and thickness based on the patterned disc you are using
  • Deep fry the murukkus in hot oil
  • Remove from oil with the help of a puri strainer or the regular strainer 
  • Place it on a kitchen tissue to drain off the excess oil
  • Allow it to cool
  • Store in an air-tight container 
Note:
You may use white sesame seeds instead of cumin seeds; basically for the flavour!

Happy Pongal 2021!

Hi friends,

I wish you all a very happy Pongal!

India, being a country with lot of diversity in culture, celebrates the festival of harvest in different parts of the country with different names. In the south indian state of Tamilnadu, it is called the festival of Pongal. In the other southern states of Telangana, Andhra Pradesh, Karnataka and Maharashtra, it is celebrated as Makar Sankranti. In the northern states of Punjab, Haryana, Delhi, Himachal Pradesh and Rajasthan, it is celebrated as Lohri. In the northeastern states of Assam, Arunachal Pradesh, it is celebrated as the festival of Bihu.

Pongal is the festival of harvest. After the harvest, pongal is a dish made from the newly harvested rice, traditionally cooked in earthen pots and offered to the Sun God, the source of energy for all life forms in this earth.

The festival is a form of Thanksgiving celebration to the Sun God for the good harvest that the farmers had the previous year.

In Tamilnadu, the day following the Pongal is celebrated as Maatu Pongal. The cows which have been the farmers friend and partner in the field work resulting in the harvest are worshipped. The famous jallikattu is held on this day in different parts of Tamilnadu which showcases the might of the bulls of the farmers and the courage of the players involved in the same.

Usually, the sweet sarkkarai Pongal, paal Pongal and ven pongal are made on the day. You will find the recipes of sarkkarai Pongal and ven Pongal in this blog. You may click on the following links to the recipes:




  • Paal Pongal is just rice cooked in milk, garnished with cashewnuts, cardamoms and raisins.
