Ingredients:
- Atta or wheat flour - 1 cup
- Salt - half teaspoon
- Oil - half a teaspoon
- Water - half two three fourth Cup, as required
- Ghee or clarified butter - 4 -5tsp
Method:
- Take the Atta or wheat flour in a mixing bowl
- Add the salt and oil and mix well
- Add water little by little to the Atta or wheat flour and knead to form a dough which is slightly loose
- Divide the dough into equal portions
- Roll out each portion into a circle
- Heat the tawa or griddle
- Place the rolled out dough on the tawa and cook on both sides by flipping over once
- Then, remove it from the tawa and place it directly on the gas stove flame
- Cook till it puffs up
- Remove from the flame
- Smear about half a tsp of ghee or clarified butter on the phulka
- Serve hot with any accompaniment of your choice
Tips:
- Smearing ghee is optional. We usually like to have our phulka rotis with ghee smeared on them while it’s still hot. It tastes really good
- You can pack this in lunch-box for children or for your husband. In that case, smearing ghee will keep the phulka rotis soft in texture
- If you have to pack it for journeys, wrap them in a clean kitchen towel and then pack it in a stainless steel layered lunch box to keep it fresh for a day or two
