Left over rice can be used to make this rice adai recipe. It tastes really good.
Left over rice can be used to make this rice adai recipe. It tastes really good.
Ingredients:

- Rice flour - 3 tablespoons
- Onion - 1, medium sized, finely chopped
- Green chilli - 1, finely chopped
- Curry leaves - a few
- Salt - to taste
- Oil - for frying
Method:
- Re-heat the left-over rice
- Mash it with a mashed or ladle
- Alternatively, you can run it in a mixer grinder in pulse mode to mash it evenly
- Add the rice flour to it
- Mix well
- Add the chopped onions, green chillies, curry leaves and salt
- Mix well to form a dough
- Divide the dough into equal portions
- Roll each portion into a ball
- Flatten each ball into a circle
- Heat the tawa or griddle
- Place the rice adai on the tawa
- Add 1/2 a teaspoon of oil over it
- Flip over and cook on the other side as well
- Repeat the same with the rest of the dough balls
- Serve hot with accompaniment of your choice
Tips:
- To flatten the dough ball into a circle, you can use a plastic sheet or a banana leaf smeared with oil
- Make sure you have enough oil on your hands as well
