Aloo fingers or Potato fingers is an easy to prepare evening snack. It is similar to cutlets, the shape is cylindrical and hence the name.

Aloo fingers or Potato fingers is an easy to prepare evening snack. It is similar to cutlets, the shape is cylindrical and hence the name.
Ingredients:
- Potato - 1, small sized, boiled and mashed
- Onion - 1, medium sized
- Green chillies - 1, finely chopped
- Ginger - 1/2 inch, finely chopped
- Garlic - 3 cloves, finely chopped
- Turmeric powder - 1/2 teaspoon
- Red chilli powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala powder - 1/4 teaspoon
- Cinnamon - 1 inch piece
- Cloves - 3
- Cardamom - 1
- Salt - to taste
- Oil - for frying
- Bread crumbs - 3/4 cup
- Maida or refined flour - 2 tablespoons
- Water - 1/2 cup + 3 tablespoons
Method:
- Heat 1 tablespoon of oil in a pan
- Add the cinnamon, cloves and cardamom
- Add the chopped ginger and garlic
- Sauté well
- Add the chopped onions and green chillies
- Sauté well
- Add the turmeric powder, red chilli powder and coriander powder
- Sauté well
- Add 1/2 a cup of water
- Cook covered with a lid for 4-5 minutes
- Then, add the garam masala powder and the mashed potatoes
- Mix well till it leaves the sides of the pan
- Remove and keep aside
- Divide the mixture into equal portions
- Roll each portion into a ball and flatten it to form a cylindrical shape
- Mix the maida with water to form a paste
- Dip the cylindrical potato fingers in the maida paste
- Then, coat it with bread crumbs and keep aside
- Repeat the same with the rest of the portions
- Heat oil in a pan
- Shallow fry theses potato fingers in the pan till done
- Serve hot with accompaniment of your choice
