PAKODA MORKULAMBU / PAKODILU MAJJIGA PULUSU

Hi friends,
Mor kulambu or majjiga pulusu is an authentic South Indian main course gravy recipe made with curd. It usually finds a place in an authentic South Indian wedding platter. It can be made at home. The traditional one has onion pakoras in it. You may add any vegetable of your choice. 


Ingredients:
  • Curd - 1 cup
  • Onion pakoras - 1 cup (you can click here for the recipe of onion pakoras)
  • Small onion shallots - 1/2 cup
  • Mustard seeds - 1/2 teaspoon 
  • Jeera - 1/2 teaspoon + 1/2 teaspoon 
  • Split urad dal - 1/2 teaspoon 
  • Dried Red chilli (round)- 1
  • Turmeric powder - 1 teaspoon 
  • Coriander powder - 1/2 teaspoon 
  • Salt - to taste 
  • Water - 2 cups + 1 cup
  • Coconut - freshly grated - 1/2 cup
  • Toor dal - 3 tablespoons - soaked in water for 1 hour
  • Green chillies - 2
  • Curry leaves - a few
  • Oil - 3 tablespoons 
Method:
  • Prepare the onion pakoras and keep aside (you can click here for the recipe of onion pakoras)
  • Heat Oil in a pan
  • Add the mustard seeds, cumin seeds, split urad dal and dried red chilli
  • Once the seeds splutter, Add the small onion shallots
  • Sauté well 
  • Add the curry leaves
  • Add the turmeric powder and coriander powder 
  • Sauté well
  • Add the water 
  • Cook covered with a lid 
  • In the meantime, grind the freshly grated coconut, soaked toor dal, cumin seeds, green chillies with water in a mixer grinder to a smooth paste 
  • Once the water boils, simmer the flame and add the coconut paste and curd
  • Mix well
  • Again, cook covered with a lid 
  • Once it comes to a boil, add the onion pakoras to it
  • Cover it with the lid 
  • Switch off the flame and Allow it to soak in the gravy
  • Serve after 15-20 minutes

CHOCOLATE SPONGE CAKE IN MICROWAVE

Hi friends, 
Chocolate sponge cake is an all-time favourite for most of us. It can be prepared easily at home that too in a microwave without the need for a convection oven. I have shared my cake recipe that can be made in just 4 minutes in a microwave.


Ingredients:
  • Refined flour / Maida - 1/2 cup
  • Baking powder - 1 teaspoon 
  • Eggs - 2
  • Powdered sugar - 1/2 cup + 2 tablespoons 
  • Cocoa powder - 2 tablespoons 
  • Oil - 1/3 cup + 1 teaspoon 
  • Milk - 1/4 cup 
  • Cinnamon powder - 1/2 teaspoon 
Method:
  • Sieve the maida along with baking powder 
  • Keep aside 
  • Beat the eggs in a mixing bowl 
  • Add the powdered sugar 
  • Mix well with a whisk
  • Add the cinnamon powder 
  • Whisk well
  • Add the oil 
  • Whisk again
  • Add the sieved maida and baking powder
  • Keep whisking well
  • Add the cocoa powder 
  • Whisk again
  • Add the milk
  • Whisk well to get a batter of pouring consistency 
  • Take a microwave safe bowl with the shape of your choice
  • Grease it with a tablespoon of oil 
  • Pour the batter in the bowl

  • Place it in the microwave Oven
  • Microwave at 100% power for 4 minutes 
  • Leave it for another 2 minutes inside the microwave oven to allow for standing time
  • Remove from the microwave oven
  • Allow it to cool

  • Cut into slices of your choice and serve

Tips :
  • You may use vanilla essence instead of cinnamon powder as per your choice
  • You may serve it with a dollop or vanilla or chocolate ice-cream too

SWEET APPAM

Hi friends,
Sweet Appam is a traditional sweet pancake recipe. It can be made for breakfast or as an evening snack.

Ingredients:
  • Refined flour or Maida - 1 cup
  • Jaggery - 3/4 - 1 cup depending upon the level of desired sweetness
  • Cardamom - 3
  • Cashews - 6
  • Raisins - 6
  • Water - 1.5 - 2 cups 
  • Ghee or clarified butter - for frying 
Method:
  • Take the refined flour in a mixing bowl
  • Boil the water in a pan
  • Add the jaggery and boil it till it dissolves 
  • Strain the jaggery syrup on to the refined flour
  • Mix well till you get a batter of pouring consistency 
  • Add the cardamom, cashews and raisins
  • Mix well
  • Heat the tawa or a griddle 
  • Smear a little ghee on it
  • Pour a dollop of the batter in the centre 
  • Spread it around with the ladle to get a round shape like a pancake
  • Add ghee all over the pancake
  • Allow it to cook
  • Flip it over and cook on the other side as well on the tawa
  • Add a little ghee over it
  • Remove and serve hot

MOOLI KA PARATHA / MULLANGI PARATHA / RADISH STUFFED PARATHA

Hi friends,
Mooli ka paratha Or radish stuffed paratha is a healthy breakfast recipe. These kind of stuffed parathas are a means of  including vegetables in children’s diet, especially children who are very fussy.


Ingredients:
For the stuffing:
  • Radish or Mullangi - 2, grated
  • Oil - 1 teaspoon
  • Red chilli powder - 1/2 teaspoon 
  • Garam masala powder - 1/4 teaspoon 
  • Salt - to taste 
For the dough:
  • Atta or wheat flour  - 2 cups
  • Salt - to taste
  • Water - 3/4 - 1 cup 
Method:
For the stuffing:
  • Heat Oil in a pan
  • Add the grated radish
  • Sauté well 
  • Add the red chilli powder, garam masala powder and salt 
  • Sauté well
  • Keep aside
  • Divide the paste into equal portions
  • Keep aside 
For the dough:
  • Take the Atta or wheat flour  in a mixing bowl
  • Add the salt
  • Mix well
  • Add the water little by little 
  • Knead the Atta or wheat flour well to make a smooth dough
  • Cover it with a damp kitchen towel
  • Allow it to rest for 15 minutes 
  • After 15 minutes, divide the dough into equal portions (same as the number of portions of stuffing that you have made)
  • Roll each portion into a ball 
  • Keep aside 
For the final stuffing and assembly:
  • Take a ball of the dough
  • Flatten it into a circle
  • Place a portion of the stuffing in the centre
  • Pull over the sides of the dough to cover the stuffing all over to make a ball
  • Then, flatten it into a flat bread or paratha
  • Heat a  tawa or griddle 
  • Place the paratha on the tawa 
  • Allow it to cook well
  • Flip over and cook on the other side also 
  • Smear some oil on the surface of the paratha while cooking
  • Serve hot with accompaniment of your choice

RAVA DOSAI

Hi friends,
Rava dosai is a breakfast recipe. The batter is easy to prepare but the making of the dosa is an art that needs to be mastered with practice. So, please don’t lose hope if it doesn’t turn out well the first time even though it may taste good.


Ingredients:
  • Rava or semolina - 1 cup
  • Refined flour or maida - 3/4 cup
  • Rice flour - 3/4 cup
  • Green chillies - 4
  • Ginger - 1 inch piece 
  • Jeera or cumin seeds - 1 teaspoon 
  • Black pepper corns - 1 teaspoon 
  • Curry leaves - a few
  • Salt - to taste
  • Water - 4 cups
  • Oil - for cooking the dosa
Method:
To prepare the batter:
  • Take the rava, maida and rice flour in a mixing bowl
  • Add the salt and jeera
  • Mix well
  • Grind the ginger, green chillies, curry leaves, black pepper corns in a mixer grinder 
  • Add this to the batter 
  • Add the water to make a batter of pouring consistency 
  • Keep aside for 30 minutes 
To prepare the dosa:
  • Mix the batter well
  • Heat a tawa or griddle 
  • Pour a dollop of the batter in the periphery of the tawa
  • Spread it out all around in a centrifugal fashion to make a dosa
  • Add a teaspoon of oil all around and over the dosa
  • Once the dosa is cooked well
  • Flip it over and cook on the other side as well
  • Remove and serve with accompaniment of your choice

IDLI MAAVU BONDA / PUNUGULU

Hi friends,
Punugulu or idli maavu bonda is a deep-fried snack made with idli-dosa batter. It can be made with fresh batter or left-over batter.

Ingredients:

  • Idli-dosa batter - 2 cups
  • Rava - 2 tablespoons 
  • Rice flour - 2 tablespoons 
  • Onion - 1/2, medium sized, finely chopped 
  • Green chillies - 2, finely chopped 
  • Cumin seeds or jeera - 1/2 teaspoon 
  • Curry leaves - a few
  • Salt - to taste 
  • Oil - for frying 
Method:
  • Take the idli-dosa batter in a bowl 
  • Add the rava and rice flour
  • Mix well
  • Add the onions, green chillies, jeera, curry leaves and salt 
  • Mix well
  • Heat oil in a pan
  • Take a little batter with your hand
  • Drop it in the hot oil as small portions 
  • Allow it to deep fry
  • Flip over and cook on all sides
  • Remove it onto a kitchen tissue (paper towel) to drain off the excess oil
  • Serve hot with coconut chutney, green chutney, tomato garlic chutney or onion tomato coriander chutney

BEETROOT KONDAKADALAI PORIYAL

Hi friends,
Beet root kondakadalai poriyal is a healthy and nutritious accompaniment for sambar, rasam, vegetable kurma, chicken kurma, spicy chicken gravy.

Ingredients:
  • Beet root - 1/4 kg, chopped into small pieces
  • White channa - 1/4 cup, soaked in water for 6-8 hours 
  • Mustard seeds - 1 teaspoon 
  • Cumin seeds - 1 teaspoon 
  • Split urad dal - 1 teaspoon 
  • Green chilli - 1, cut into half
  • Curry leaves - a few
  • Onion - 1, small sized, finely chopped 
  • Turmeric powder - 1/2 teaspoon 
  • Salt - to taste 
  • Water - 1/2 cup + 1/2 cup
  • Oil - 3 teaspoons 
Method:
  • Cook the White channa with half a cup of water in a pressure cooker  for 3 whistles
  • Once the pressure releases, remove from the pressure cooker and keep aside
  • Heat oil in a pan 
  • Add the mustard seeds, cumin seeds and split urad dal
  • Once the seeds splutter, add the green chilli and curry leaves 
  • Add the chopped onions 
  • Sauté well 
  • Add the turmeric powder and salt
  • Add the chopped beet roots
  • Sauté well 
  • Add half a cup of water
  • Cooked covered in the pan with the lid till the beet roots are cooked well
  • Add the boiled channa
  • Sauté well 
  • Serve

CHOLE MASALA / CHANNA MASALA

Hi friends,
Chole masala is a nutritious side-dish recipe for Bhatura, poori and phulka roti. It can be easily made at home.

Ingredients:

  • White Channa or chickpeas - 1/2 cup, soaked in water for 6-8 hours
  • Onion - 2 medium sized, roughly chopped
  • Tomatoes - 2 medium sized, ground to a smooth paste 
  • Garlic - 6 cloves
  • Ginger - 3/4 inch piece
  • Cinnamon - 1/2 an inch piece
  • Cardamom - 2 
  • Cloves - 3 
  • Turmeric powder - 1/2 teaspoon 
  • Red chilli powder - 1 teaspoon 
  • Coriander powder - 2 teaspoons 
  • Garam masala powder - 1/2 teaspoon
  • Salt to taste
  • Coriander leaves for garnishing 

Method:
  • Drain off the excess water from the soaked White channa
  • Cook in a pressure cooker with 1/2 a cup of water for 3 whistles 
  • Once the pressure releases, Remove from the pressure cooker and keep aside 
  • Grind the ginger, garlic and onions in a mixer grinder into a smooth paste
  • Keep aside
  • Heat Oil in a pan
  • Add the cinnamon, cloves, cardamom 
  • Add the ground onion paste
  • Sauté till it turns brown
  • Add the turmeric powder, red chilli powder, coriander powder and salt 
  • Sauté well 
  • Add the tomato paste 
  • Sauté well 
  • Add the boiled channa and garam masala
  • Cook covered with a lid for 4-5 minutes 
  • Garnish with coriander leaves
  • Serve hot with accompaniment of your choice

  • Poori
  • Phulka roti
  • Chapathi

MACARONI ELBOW PASTA EGG MASALA

Hi friends,
Macaroni pasta egg masala is an Indian version of pasta which is a healthy breakfast option for kids.


Ingredients:

  • Macaroni elbow pasta - 1 cup
  • Water - 5 cups + 1/2 cup
  • Oil - 3 tablespoons  
  • Cinnamon - 1 inch piece 
  • Cloves - 3
  • Cardamom - 1
  • Garlic - 3 cloves, finely chopped 
  • Ginger - 1, inch piece, finely chopped 
  • Onion - 1, medium sized, finely chopped 
  • Tomato - 1, medium sized, finely chopped 
  • Green chillies - 2, small. finely chopped 
  • Red chilli powder - 1/2 teaspoon 
  • Coriander powder - 1 teaspoon 
  • Turmeric powder - 1/2 teaspoon 
  • Salt - to taste 
  • Eggs - 4
Method:
  • Boil 5 cups of water in a pan
  • Add a tablespoon of oil and salt to it
  • Add the pasta
  • Allow it to cook till the pasta is cooked to al-dente perfection 
  • Drain off the excess water by transferring it to a colander 
  • Keep aside
  • Heat oil in a pan
  • Add the cinnamon, cloves and cardamom 
  • Add the ginger and garlic
  • Sauté well 
  • Add the onions and green chillies 
  • Sauté well till the onions turn transparent 
  • Add the turmeric powder, red chilli powder, coriander powder and salt
  • Sauté well
  • Add the tomatoes 
  • Sauté well till the tomatoes become mushy 
  • Add half a cup of water 
  • Cook covered with a lid 
  • Once cooked, remove the lid, add the eggs one by one
  • Keep stirring till the eggs are cooked well
  • Add the cooked pasta
  • Toss it well
  • Serve hot

ATTA HALWA or WHEAT FLOUR HALWA


Hi friends,
Atta or wheat flour halwa is a simple and instant halwa recipe that can be prepared at ease for unexpected guests.


Ingredients:

  • Atta or wheat flour  - 1 cup
  • Ghee or clarified butter - 1 cup + 2 tablespoons 
  • Sugar - 1 cup
  • Water - 3 cups
  • Cardamom - 3, crushed coarsely
  • Cashews - 15
Method:
  • Heat a cup of ghee in a pan
  • Add the cashews
  • Roast them till golden brown
  • Remove and keep aside
  • Add the Atta or wheat flour to the ghee
  • Keep stirring well in low-medium flame till you get a nice aroma
  • Add the sugar
  • Mix well
  • Add the water
  • Mix well
  • Keep stirring continuously for about 20 minutes till the halwa starts to leave the sides of the pan
  • Add the crushed cardamoms and roasted cashews 
  • Mix well
  • Add two tablespoons of ghee
  • Stir well 
  • Remove and serve hot
