The Amla rice recipe is an easy to prepare recipe that can be made by beginners too. It tastes like lemon rice.
Ingredients:
- Amla / Nellikkai / Indian gooseberry - 7-9, depending on the size and desired level of sourness;
- Green chillies - 6
- Asafoetida - 1/2 teaspoon
- Rice - 1 cup, cooked in pressure cooker or electric rice cooker and allowed to cool in a plate
- Turmeric powder - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Split urad dal - 1/2 teaspoon
- Chana dal - 1/2 teaspoon
- Groundnuts - 1 tablespoon
- Curry leaves - a few
- Salt - to taste
- Gingelly oil - 2 tablespoons
METHOD:
- Spread the cooked rice in a large pan or plate
- Add 1 tbsp oil and salt
- Mix well and keep aside
- Grate the Amla with a grater and keep aside
- Heat oil in a pan
- Add mustard seeds, chana dal and split urad dal
- Allow the mustard seeds to splutter
- Add the green chillies, curry leaves, asafoetida and Groundnuts
- Roast them well
- Add turmeric powder and the grated Amla
- Saute well as shown in the picture
- Add the Amla mixture to the rice
- Mix well
- Serve with accompaniment of your choice
