Vegetable cutlets are a healthy evening snack. They can be made with a variety of seasonal vegetables. I share the recipe of my vegetable cutlets that I usually make.

Vegetable cutlets are a healthy evening snack. They can be made with a variety of seasonal vegetables. I share the recipe of my vegetable cutlets that I usually make.
Ingredients:
- Potato - 1, small sized, boiled and mashed
- Beet root - 1, small sized, grated
- Carrot - 1, cut into small pieces
- Beans - chopped, 1/2 cup
- Onion - 1, medium sized
- Green chillies - 1, finely chopped
- Ginger - 1/2 inch, finely chopped
- Garlic - 3 cloves, finely chopped
- Turmeric powder - 1/2 teaspoon
- Red chilli powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala powder - 1/4 teaspoon
- Cinnamon - 1 inch piece
- Cloves - 3
- Cardamom - 1
- Salt - to taste
- Oil - for frying
- Bread crumbs - 3/4 cup
- Maida or refined flour - 2 tablespoons
- Water - 1/2 cup + 3 tablespoons
Method:
- Heat 1 tablespoon of oil in a pan
- Add the cinnamon, cloves and cardamom
- Add the chopped ginger and garlic
- Sauté well
- Add the chopped onions and green chillies
- Sauté well
- Add the grated beet root, carrot and chopped beans
- Add the turmeric powder, red chilli powder and coriander powder
- Sauté well
- Add 1/2 a cup of water
- Cook covered with a lid for 4-5 minutes
- Then, add the garam masala powder and the mashed potatoes
- Mix well till it leaves the sides of the pan
- Divide the stuffing into equal portions
- Shape each divided portion into desired shapes
- Keep aside
- Take maida in a plate
- Mix with 3 tablespoons of water to form a paste
- Coat each of the shaped cutlet with this paste
- Dip the maida paste coated cutlet in a plate of breadcrumbs
- Make sure the bread crumbs are coated evenly
- Place the cutlet in a pan and shallow fry it with oil
- Flip over and cook on both sides
- Serve hot with accompaniment of your choice
