PURAN POLI

Hi friends,
Puran poli is a versatile sweet recipe that has its roots in the Tamilnadu, mangalorean and maharashtrian cuisines of India. It is actually like a stuffed paratha with a sweet stuffing. The stuffing can be of different varieties. I post the most common recipe of the puran poli that I make at our home.

Ingredients:
For the stuffing:
  • Chana dal / Bengal gram - 1/2 cup; soaked in water for 2 hours 
  • Jaggery - 3/4 cup
  • Freshly grated coconut - 1/2 cup
  • Cardamom - 3
  • Cashews - 6
  • Salt - a pinch
  • Water - 1/4 cup
For the dough:
  • Maida or refined flour - 3 cups
  • Oil - 1/3 - 1/2 cup
  • Salt - 1/4 teaspoon 
  • Yellow food colour - a pinch; optional
  • Water - 3/4 - 1 cup 
Method:
For the stuffing:
  • Drain the water from the soaked dal
  • Pressure cook the Chana dal with water for 1 whistle 
  • Heat a kadai  or wok
  • Dry roast the freshly grated coconut 
  • Keep aside
  • Dissolve the jaggery in water
  • Strain it 
  • Transfer it to the kadai 
  • Once the jaggery syrup comes to a boil
  • Add the dry-roasted freshly grated coconut 
  • Add the cardamoms, cashews and salt 
  • Keep stirring till the water evaporates 
  • Switch off the stove 
  • Allow it to cool
  • Transfer it to a mixer grinder jar
  • Grind it to a smooth paste in the mixer grinder
  • Divide the paste into equal portions 
  • Roll each portion into a ball 
  • Keep aside 
For the dough:
  • Take maida in a mixing bowl
  • Add the salt and yellow food colour 
  • Add the oil and water little by little to form a smooth dough
  • Cover it with a damp kitchen towel
  • Allow it to rest for 30 minutes 
  • After 30 minutes, divide the dough into equal portions (same as the number of stuffing balls that you have made)
  • Roll each portion into a ball 
  • Keep aside 
For the final stuffing and assembly:
  • Take a ball of the dough
  • Flatten it into a circle
  • Place a ball of the stuffing in the centre
  • Pull over the sides of the dough to cover the stuffing all over to make a ball
  • Then, flatten it into a flat bread with the help of your palm
  • Heat a tawa  or griddle 
  • Place the poli on the tawa 
  • Allow it to cook well
  • Flip over and cook on the other side also
  • Smear some oil on the surface of the poli while cooking
  • Serve hot
