Paal kozhukattai is a traditional dessert recipe made in the South Indian state of Tamilnadu. It can be served hot on a rainy evening as well.
Ingredients:
- Rice flour - 1/2 cup + 1 tablespoon
- Jaggery - 1/2 cup
- Water - 1/2 cup + 3/4 cup
- Salt - 1/8 teaspoon
- Cardamom powder - 1 teaspoon
- Dry ginger powder (sukku pori) - 1 teaspoon
- Freshly grated coconut - 1/2 cup
- Ghee or clarified butter - 1 tablespoon
- Milk - 125ml
Method:
- Take 1/2 cup rice flour in a mixing bowl
- Add the ghee, salt and freshly grated coconut
- Boil 3/4 cup of water in a pan
- Add the water little by little to the rice flour mixture
- Mix well with the help of a ladle to form a soft dough
- Divide the dough into equal portions
- Roll each portion into a ball
- Keep aside
- Heat the jaggery along with 1/2 a cup of water in a pan
- Add the dry ginger powder and cardamom powder
- Once the jaggery dissolves, strain the syrup through a strainer and transfer it to another pan
- Allow the jaggery syrup to come to a boil
- Add the rice flour balls (kozhukattai) to the boiling jaggery syrup
- Cook covered with the lid for about 10 minutes
- Then remove the lid
- Make a paste with 1 tablespoon of rice flour with 3 tablespoons of water
- Add this paste to the boiling jaggery syrup to give a thicker consistency
- Allow it to cook
- Add the milk
- Stir well till the desired consistency
- Transfer to serving bowls
- Serve hot or refrigerate and serve chilled
