Ingredients:

- Black Pepper corns - 2-3 tablespoons (depending on the desired level of spiciness)
- Cumin seeds - 1 teaspoon
- Ginger - 1 inch piece, roughly chopped
- Asafoetida - 1/2 teaspoon
- Salt - to taste
- Water - 1.5 cup for soaking the dal; Less than 3 tablespoons while grinding
Method:
- Wash the urad dal well
- Soak the urad dal in water for 6-8 hours
- After 6-8 hours, drain off the water and transfer to a mixer grinder
- Add the cumin seeds, ginger, salt, asafoetida
- Grind it in the mixer grinder to a coarse paste
- You may sprinkle very little water while grinding in the mixer grinder
- Once the batter is ready, remove a little bit of the batter
- Place it on your palm and flatten it
- Heat oil in a pan
- Drop the vadai in the hot oil
- Cook for 2 minutes till it becomes crispy
- Remove and place it on a kitchen tissue (paper towel) to drain off the excess oil
- Serve or store in an airtight container

Tips:
- While shaping the vadai, you may wet your palm and the fingers of the other hand to avoid being messy
