MEDU PAKODA / PATTANAM PAKODA

Hi friends,
Medu pakoda or pattanam pakoda is a traditional evening snack recipe made in thanjavur district of the South Indian state of Tamilnadu. It has a crunchy outer layer with a soft inner mass so that when you bite into it you feel the texture really appealing.

Ingredients:

  • Besan or gram flour - 1/2 cup
  • Rice flour - 1/2 cup
  • Fried gram - powdered - 1/2 cup
  • Cumin seed powder - 1 teaspoon 
  • Fennel seed powder - 1 teaspoon 
  • Ginger paste - 1 teaspoon 
  • Garlic paste - 1 teaspoon 
  • Red chilli powder - 1/2 teaspoon 
  • Turmeric powder - 1/2 teaspoon 
  • Green chillies - 2-3; depending on the desired level of spiciness; chopped
  • Onion - 1, medium sized, chopped 
  • Baking soda - 1/2 teaspoon 
  • Ghee or clarified butter - 2 tablespoons 
  • Cashews - 6, broken into halves
  • Salt - to taste 
  • Water - < 1/2 cup
  • Oil - for frying 
Method:
  • Take the Besan, rice flour, fried gram powder, cumin seed powder, fennel seed powder, turmeric powder, red chilli powder, baking soda and salt in a mixing bowl 
  • Add the ginger paste and garlic paste 
  • Mix well
  • Add the onions and green chillies 
  • Mix well
  • Heat the ghee in a kadai 
  • Add the cashews and roast them 
  • Add the fried cashews along with the hot ghee to the flour mixture 
  • Mix well with the help of a ladle
  • Then, sprinkle water little by little till you make a dough
  • Divide the dough into equal portions 
  • Roll each portion into a ball 
  • Keep aside 
  • Heat oil in the kadai  or wok
  • Deep fry them in batches till they turn crispy
  • Remove and place on a kitchen tissue (paper towel)
  • Serve hot with accompaniment of your choice
