Recipe#25 TAMARIND RICE / PULIYOTHARAI / PULIHORA

Hi friends,
Tamarind rice is a very delicious recipe. It is not only a very important neivadyam/prasadam to be offered to god, it is very ideal for carrying while travelling on long journeys for hours. Even though you have a lot of hotels in the highways or good restaurants or eateries in railway stations, carrying home-cooked food is always a safe bet. Tamarind rice is ideal since it will stay good for atleast two days. You can pack it along with some chips or vadams or appalams. That will make a good meal.

INGREDIENTS:

  • Plain rice - 1 cup, cooked in pressure cooker or electric rice cooker
  • Tamarind juice extract- made from tamarind of a size of 1 medium lemon soaked in 1/2 cup of water
  • Mustard seeds- 1tsp
  • Split urad dal- 1 tsp
  • Cumin seeds- 1 tsp
  • Red chillies (Guntur) -3 nos 
  • Asafoetida- 1tsp
  • Peanuts- 3tbsp
  • Curry leaves- a handful
  • Gingelly oil - 3tbsp
  • Red chillies- 6nos
  • Coriander seeds- 2tbsp
  • Chana dal - 2tbsp
  • Fenugreek seeds- 1tsp
  • Sesame seeds-1tsp 
  • Black pepper- 1tsp
  • Salt - to taste
METHOD:
  • Spread the cooked rice in a large bowl or plate
  • Add 1/2 tbsp oil and 1tsp salt
  • Mix well
  • Allow it to cool
  • Dry roast the red chillies, coriander seeds, chana dal, fenugreek seeds, sesame seeds and black pepper
  • Grind to a course powder and add this to the rice
  • Mix well and keep aside
  • Heat oil in a pan
  • Add the mustard seeds, cumin seeds, Guntur red chillies and asafoetida
  • Add peanuts
  • Saute well
  • Add the curry leaves
  • Add the tamarind juice extract and salt
  • Allow it to cook till the oil separates and the mixture leaves the sides of the pan
  • Add the mixture to the rice
  • Mix well
  • Serve
