SWEET SOMAS WITH FRIED GRAM STUFFING

Hi friends,
Sweet Somas is a traditional south-indian sweet recipe made during special occasions and festivals especially during Diwali.

In this post, I shall share the recipe with fried gram stuffing.

For the outer cover:
INGREDIENTS:
  • Refined flour - 1 cup
  • Rava / Semolina - 3tsp
  • Salt - 1tsp
  • Butter / ghee or clarified butter - 1tsp 
  • Water - 1/4-1/2 cup
Knead all the above ingredients to make a stiff dough
Allow it to rest for 15minutes

For the fried gram stuffing:
Ingredients:
  • Fried gram-  1/2 cup; powdered in a mixer grinder to a coarse powder
  • Powdered Sugar - 1/4cup
  • Cardamom powder-1tsp
  • Ghee or clarified butter - 1 tsp
  • Cashews - 6nos; chopped
  • Almonds - 6nos; chopped
METHOD:
  • Heat ghee or clarified butter in a pan
  • Add cashews and raisins
  • Add the powdered fried gram
  • Saute well
  • Add the powdered sugar and cardamom powder
  • Mix well
  • Allow it to cool


To assemble and make the Somas:
INGREDIENTS:
  • The dough
  • The fried gram stuffing
  • Oil for deep frying
  • Water - 1/4 cup
METHOD:
  • Divide the dough into small portions
  • Make balls with them
  • Flatten each ball into a round disc
  • Place about 1-1.5 tsp of the fried gram stuffing on one half of the circular dough
  • Cover it over with the other half of the circle
  • Wet the inner edge of the circle with water and seal the edges
  • Heat oil in a wok / kadai
  • Deep fry the prepared Somas in hot oil
  • Remove from oil
  • Allow it to cool 
  • Store in an airtight container
