CORN FLAKES MIXTURE

Hi friends,
Diwali is not complete without a mixture in my Diwali platter. There are different varieties of mixture made all over India. The most common mixture that we make at our house is the cornflakes mixture. It is very easy to make.


INGREDIENTS:
  • Cornflakes- 250 gms
  • Aval (Rice flakes) - 100 gms
  • Peanuts - 100 gms
  • Fried gram- 100 gms
  • Curry leaves - a handful
  • Red chilli powder- 2-3tsp (depending on the desired spiciness)
  • Salt - to taste
  • Oil - for deep frying
METHOD:
  • Heat oil in a kadai/ wok
  • Deep fry the corn flakes in batches
  • I prefer using the mesh strainer for this, it makes my job easier!
  • Place it on a kitchen tissue to drain off the excess oil 
  • Similarly deep-fry the peanuts, followed by the fried gram
  • I use the mesh strainer for this too, you may also use the puri strainer or the regular strainer for this
  • Deep fry the rice flakes in batches
  • Place it on a kitchen tissue to drain off the excess oil 
  • Lastly, fry the curry leaves till they turn crisp
  • Add red chilli powder and salt to the fried ingredients when they are still hot
  • Mix all the fried ingredients 
  • Allow it to cool
  • Store in an airtight container
