QUICK AND TASTY EVENING SNACK - SPICY FRIED DIAMOND CUT BISCUITS #spicydiamondcuts #diamondbiscuits #deepavalisnacks #diwalinamkeen #karamsfordeepavali

Hi friends,

Spicy fried Diamond Cut Biscuits is a great tea-time snack. It is a very easy and simple recipe. It can be made and stored in an airtight container for about a week. There are two versions of this recipe that I make. I shall post both the versions of this recipe in this blog post today. The ingredients will differ in both the versions, however, the method of the recipe is the same.

VERSION 1:

INGREDIENTS:
  • Rice flour - 1 cup
  • Refined flour - 1 cup
  • Besan / Chickpea flour - 1/2 cup
  • Carom seeds / Omam / Ajwain - 1 tsp
  • White sesame seeds / Ellu / Til - 6 tsp
  • Cumin seeds / Jeera - 1.5 tsp
  • Salt - to taste
  • Asafoetida - 2 tsp
  • Red chilli powder - 2.5 tsp
  • Oil for deep frying
VERSION 2:

INGREDIENTS:
  • Refined flour - 1/2 cup
  • Butter - 2 tsp
  • Carom seeds / Omam / Ajwain - 1/4 tsp
  • Cumin seeds / Jeera - 1/4 tsp
  • Garlic paste - 1 tsp
  • Salt - to taste
  • Red chilli powder - 1/2 tsp
  • Oil for deep frying


METHOD FOR BOTH THE VERSIONS:

  • Mix all the ingredients except the oil
  • Add water to make a stiff dough
  • Cover it with a muslin cloth
  • Allow it to rest  for about 10 minutes
  • After 10 minutes, divide the dough into 2-3 small portions
  • Roll each portion into a disc 
  • Cut it across with a knife into desired shapes
  • Deep fry the diamond cuts in hot oil
  • Remove from oil with the help of a puri strainer or the regular strainer 
  • Place it on a kitchen tissue to drain off the excess oil 
  • Allow it to cool
  •  Store in an airtight container
