Chole masala is a nutritious side-dish recipe for Bhatura, poori and phulka roti. It can be easily made at home.
Ingredients:
- White Channa or chickpeas - 1/2 cup, soaked in water for 6-8 hours
- Onion - 2 medium sized, roughly chopped
- Tomatoes - 2 medium sized, ground to a smooth paste
- Garlic - 6 cloves
- Ginger - 3/4 inch piece
- Cinnamon - 1/2 an inch piece
- Cardamom - 2
- Cloves - 3
- Turmeric powder - 1/2 teaspoon
- Red chilli powder - 1 teaspoon
- Coriander powder - 2 teaspoons
- Garam masala powder - 1/2 teaspoon
- Salt to taste
- Coriander leaves for garnishing
Method:
- Drain off the excess water from the soaked White channa
- Cook in a pressure cooker with 1/2 a cup of water for 3 whistles
- Once the pressure releases, Remove from the pressure cooker and keep aside
- Grind the ginger, garlic and onions in a mixer grinder into a smooth paste
- Keep aside
- Heat Oil in a pan
- Add the cinnamon, cloves, cardamom
- Add the ground onion paste
- Sauté till it turns brown
- Add the turmeric powder, red chilli powder, coriander powder and salt
- Sauté well
- Add the tomato paste
- Sauté well
- Add the boiled channa and garam masala
- Cook covered with a lid for 4-5 minutes
- Garnish with coriander leaves
- Serve hot with accompaniment of your choice
